Lager yeast vs S-05 at 60 degrees

I'm not actually going to answer your question, but the general advice on such a topic is that a lager made with lager yeast at the incorrect temperature is generally a better route than trying to use ale yeast. That is to say, the lager yeast version will be what you intended, if fermented too...

Victory Hop Deveil Clone - How long before Airlock Bubbles?

Wyeast 1056 should be good up to 1.060 for 5 gallons. The package is dated. Without a starter, the yeast spends more time in the propagation phase where it simply reproduces to get ready to make beer. This is not accompanied by airlock activity. In a better bottle, it should be very...

Worried about my Schwarzbier... I pitched the whole starter.

You'll probably be fine. Give it a good lagering afterwards and I think your yeast will get rid of some of its byproducts anyways. I used Wyeast 2206 for a Schwarzbier that had a similar smell as a starter but that did not follow through in the final product.

    AG mashing in the oven?

I mean, it should work. As far as this overnight business, if you know that your wort is converted after 1 hour then further mashing won't get anything more out of it. Yes, the enzymes are still active but they act on starch not sugar. It seems the point of overnight is the obvious one -- it...

price of beer: all grain vs. extract

All grain is most certainly cheaper. Just made a 5 Gal 6% Hefe for $29 -- including hops and yeast. 5 Gal, 4.7% brown for $25, again with yeast and hops. I've also done half batches and reused yeast with spare hops for $8. What does extract cost, like $4.00 / lb? Grains are about...

    Big Yeast Starter

And just to totally go overboard, with a one stage propagation you would need around 40L = 10 gallons of starter. (This, for some reason, appears to go like x^0.6... if it is sqrt dependent then 50L = 13G).

    Big Yeast Starter

Also, if you don't use a stir plate, you could use two packs but you'd then need two separate 2L starter vessels. A two stage propogation of 2L, then 1L (in EACH) would yield ~510billion, combining them would work. I'm not sure if you can simple combine two packs into one starter. I think...

    Big Yeast Starter

Well, you'll need around 1 trillion cells. Check this out http://www.northernbrewer.com/documentation/YeastPitchingRates.pdf Looks if you use a stir plate, you can make a 2L starter then decant, add more wort and you'd be up to 1 trillion. Now, the calculations stop at 700 billion, so for...

    Ridiculous efficiency

Yeah, I totally messed up something. Not sure how I messed up the volume, I collected into a pot with quart readings. So, just finished up. Ended with 3.5gal @ 1.072. Not a chance I had that much boiloff. Diluted to 5.5G @ 1.046, so everything is fine. My efficiency still went up...

    Ridiculous efficiency

Hey all, Having some trouble figuring out the efficiency. I usually get about 65% with my LHBS crush, but went with BMW this time. The recipe 7lb MO 0.5lb Crystal 20 0.5lb Crystal 60 0.5lb Crystal 80 0.5lb Carafoam 4oz Chocolate (its basically BM's Newcastle clone, with carafoam but without...

    Brewmasters Warehouse

Just got my second order from BMW today. Made a starter tonight, gonna get working on one of the three brews I ordered. Just ridiculously stupid prices, how the hell do you stay in business. My (physical) LHBS charges $2/lb for grains and $8 for Wyeast. Your prices are, well, I'm not used to...

    StarSan and Nottingham yeast

Think about it for a second... how much Star San could you possibly have in there that it would kill 11g of yeast? Even a loss of several million yeast cells is <1% of what you pitched.

Getting pissed,Sg is just getting more off.

Well, the Midwest instructions do say 5 gallons, right? Extract brewing is very much predictable. If you've hit your final volume, then you've hit the gravity. You can't decouple the two. 1.052 = 6lbs DME + 5 gallons. End of story. If you have some specialty grains, its possible...

Need ez recipe for first AG

I don't get why a grain bill with fewer malts would be easier. You crush them all up together and dump them in at the same temp, if you do a single infusion. Who cares if you have one, two or five malts? It doesn't change what you actually do. Multiple steps or decoctions is where it gets...

    schwarzbier recipe

For commercial examples, believe it or not, Sam Adams Black Lager. This is probably my favorite. Also have had Port Brewing's Moonlight Sessions Lager... thought that sucked. Too roasty; seemed like a stout with lager yeast. Magic Hat Howl is pretty good, but a bit thin compared to the Sam...

    schwarzbier recipe

I like the Light LME/DME only choice. I have no idea what goes into the "Amber" or "Dark" extracts and would prefer to stay away from that. The "Light" one I can assume is mostly 2 row with some crystal since the color is darker than straight 2 row. You can treat Kolsch ale yeast like lager...

    50 gallon boil

Just out of curiosity, assuming you are not trying to get a license and start a proper nano-brewery, and that you live with another adult... you do realize you are not legally allowed to do more than 4 of these 50 gallon batches in a year?

    Nube nube nube

Get started with bottles. You can add kegs later on when you realize that bottles are a total pain. A single keg setup should cost about $100 + CO2. Used kegs are about $30 and you can make your own distributor to keg more than one at a time. IPAs are actually one of the easier styles as...

Is 68% efficiency decent for batch sparging?

I'm new to all-grain, but I've decided that I have the time before the boil begins to simply figure out how much I have and what the gravity of that is. From this, I'm figuring out what volume I can get down to to hit my recipe's OG. Screw the volume, I don't care if I get 4.5 or 5.0 gallons...

New Mash Tun Option - Mash Hawk

Clearly working at higher temps is a good thing, but I really have to wonder when any of us get an Igloo cooler above 170F. It certainly is cheaper than a pre-made keg mash tun, not as cheap as one you'd make yourself of course. At that size, I'd kind of prefer something I can heat...
