Party in 4 weeks, I need to brew 1 more beer to serve...

Mmmmm, everyone loves a Mild Ale. What's not to love about a beer with tons of flavor but light enough to drink a dozen and still be able to walk?

Party in 4 weeks, I need to brew 1 more beer to serve...

My first thought was a Mild Ale but it looks like you have a couple of browns going already. A low ABV wheat is probably a good bet too. I've made a few batches of 3.5%-4% American Wheat using smoked malt for most or all of the barley and everyone loves it. Great for chilling on the deck with...

Dry-hopping with a hop bag - infection risk?

About 10 days ago I moved my IPA from primary into secondary and dropped in 1 ounce of pellet hops in a hop bag, recommended by my LHBS. Instead of dropping the entire bag into my carboy, I held the last couple inches of the drawstring out of the carboy neck and wrapped it around the stopper...

    08-08-08 Russian Imperial Stout Exchange

Tonight I'm sipping from a bomber of Stone RIS and looking forward to next Friday! Another brewer started working at the office recently and I think we're going to share some brews/meads with the co-workers on the 8th as well. Hopefully I can still squeeze in a brew that evening after sampling...

    First Brew Choice

One nice thing about most American styles is that they tend to have a lot of yeast character, so it's not a huge deal if your fermentation temp controls aren't perfect. Wheat beers are another good choice for that reason, and because they're best young. Trust me, you'll have a hard time...

Teens Get Drunk On Award-Winning Microbrew

Well it is made entirely from wheat malt... I'd love to know how they get chocolatey aroma from wheat malt. :ban::ban:

First batch progression (pics) How are we doing?

Looks like you got a nice, healthy fermentation. Let the temp rise a bit and let it sit until some time next week if you're using a secondary, or leave it for 2-3 more weeks before bottling. Oh, and brew another batch!

Day 5 - Concerns before bottling

Well... you shouldn't rush it into the bottle. Let it sit for at least 2 weeks, maybe even 3, before bottling. This will let the yeast finish fermentation, clean up after itself and settle out. Otherwise you'll have very yeasty beer and maybe even some bottle bombs.

    Why is my beer moving?

It's just your yeasties doing their thing. Looks great to me!

    RIS Swap - Trencher's Beers

Wow, thanks a lot for the great reviews! I certainly think that Scotch Ale was one of my best to date. Think I'll pull out one of the remaining few and have another taste while I bottle the second batch tonight.

how soon in advance to start a starter?

Haven't tried it myself, but the best suggestion I've heard is to make 2 starter wort batches and pitch into one several days before brew day. You want to give it plenty of time to ferment out and settle. Then pitch the second starter wort batch first thing on brew day. This way you get the...

    What I have - What I need

Your fermentation cooling method is something to nail down soon... unless you like banana beers. Make sure you have an airlock for every fermentation vessel, plus one or two. My hydrometer test vial has been great, I'd suggest everyone get one. The wort chiller is only necessary in...

Do you ever enjoy cheap beer?

I just slammed 2 cans of Miller Lite... out of a Sammy Smith's pint glass. It's about the only way they're worth drinking. :tank:

My local brewery is on FIRE!

Oh dear God, say it ain't so!! Saranac was my introduction to good beer, and their new Imperial IPA and Imperial Stout have given me new respect for them after expanding my horizons. Maybe we should take up a collection for them. Seriously.

    Favorite Dry Yeast

Tried the US05 once and I was not happy with it's poor flocculation. I probably could have gotten clearer beer with a secondary but didn't want to take the time. Now I'll be using Nottingham as a backup or when I'm feeling lazy.

What do you guys do when bottling after dry hopping?

+1 on the bottling bucket. Pour in the priming sugar and rack the beer over it, then let it sit still for a little while so the hops can settle to the bottom. The spigot should be high enough above the bottom of the bucket to leave all that behind.

    Bitterness with regard to time

If you like it, drink it - others can drink the next batch if they don't like this one. As for the ABV, just have another! :ban:

    Going to Scotland

We were in Edinburgh a year ago and found many great cask ales. Caledonian is one of the big Scottish breweries, but in my experience you can wander in anywhere and try something new.

How far do you drive to your job??

Just before starting my Christmas vacation last year I went from working at home full-time to commuting 30 miles each way every day. The customer wanted contractors on site - then outsourced 95% of the work to Vietnam. If they weren't idiots they wouldn't need my help, but that doesn't make...
