Other Half Daydream (oat cream IPAs) - all grain clone attempts

Looks like a good recipe, even though I hate that yeast 😜. Idaho 7 in the WP comes through hard and Strata is amazing. Curious how it turns out. I know it’s not uncommon for them to mash high, like 160. What’s your water profile for this? I know they recommend very high chloride but I never have...

New England IPA "Northeast" style IPA

That's very impressive. What are you carbonating at? If you don't mind, can elaborate a little on what you mean when you say treat correctly in fermenter? Good to know in regards to CaCl in mash vs boil. I've been playing around with Other Half's All Together recipe and was adding 50% of water...

Isolated Yeast (Tree House): How to Identify and Characterize?

I have some fresh TH and would be happy to send you a can or two to contribute to this experiment if it would be helpful.

First time brewing with Galaxy, requesting advice

Looking forward to hearing about your results. Side note, I picked up some Green from the brewery last wknd. There was more bitterness than I remembered. It was smooth and all on the back end. Thought that was interesting.

First time brewing with Galaxy, requesting advice

Nate once stated it’s 80% Galaxy. I would use Columbus for bitter addition then 80/10/10 % Galaxy / Amarillo / Citra for flavor additions. Obviously a lot of the flavor from Green comes from the yeast but I believe that’s pretty close to their hop profile.

Isolated Yeast (Tree House): How to Identify and Characterize?

Really? Not being sarcastic but I haven’t had a EQ beer that tastes anything like TH.

Isolated Yeast (Tree House): How to Identify and Characterize?

Thanks for the update - keep us posted. I keep going back to fact that Nate is an advocate of process. If it’s true that he adds hops prior to fermentation ending for beer that uses the ‘house yeast’ and he does not for others (such as Bright) there has to be a good reason. And I’m convinced it...

New York Like New - Spike CF5 Conical Fermenter

If you’re still headed to upstate I’d be interested. I live in the Syracuse area. Let me know.

Cream Ale Cream of Three Crops (Cream Ale)

I found there to be too much corn for my pallet. Second iteration replaced 1lb of corn with white wheat. Really good crushable summer beer.

    Schwarzbier recipe critique

The more I see that pic the more I’m itching to try it. Are you willing to share the recipe you settled on?

New England IPA "Northeast" style IPA

I agree w/Dgallo and secretlevel. If you follow their advice you should be able to eliminate that as a concern. The one thing that isn’t mentioned often is that the best examples of these get flavor from somewhere other than just hops. Treehouse uses their yeast to get esters to compliment the...

Isolated Yeast (Tree House): How to Identify and Characterize?

Agree 100%. But yes, I was saying those two specific beers are similar. If you take Bright w/Galaxy for example, we know they are using a very simple grain bill with a neutral yeast, presumably US05, with the intention of expressing the hop flavor. In this case Galaxy. If we look at Green I...

Isolated Yeast (Tree House): How to Identify and Characterize?

I’ve never once said all TH beers taste the same.

Isolated Yeast (Tree House): How to Identify and Characterize?

One thing I’ve been focusing on lately is process. Not just my own, but how different breweries can use the same recipe and produce drastically different products. The All Together recipe is a great representation of this. I’ve had about 6 different versions of this beer and all are noticeably...

New England IPA "Northeast" style IPA

Makes sense - good point. But this is what I was referring to:

New England IPA "Northeast" style IPA

Do you have a reference to this? I thought Nate specifically said that wasn’t the case

New England IPA "Northeast" style IPA

And yet the brewery with the highest demand for ipa’s still uses a high % of kettle hops....

Other Half Daydream (oat cream IPAs) - all grain clone attempts

I was able to get my hands on a four pack of All Together from OH, and also had one from a local brewery. If I didn’t have them at the same time I wouldn’t have known they were the same recipe. Back to back you could tell the hops were very close in terms of flavor. The OH version had more of an...

New England IPA "Northeast" style IPA

I’m usually a little over two weeks after letting it rest a couple days post fermentation, soft crash, DH, cold crash.... and even if it’s in the keg on day 14 it’s going to taste much better on day 21, and more than likely even better on day 28. When I hear grain to glass I think finished...
