    I recall a time, not long ago when Spike was planning to borrow a bunch of money to build a new facility I think. 7-12 million of memory serves me (it often doesn't anymore. Hahaha). The deal did not go thru ... I believe. So, I feel like I am having a deja poo. (I've seen this sh#t before).

    Are you getting your grain from Carolina Malt house? It is about an hour away from me but thought of picking up a few bags to check them out. I am curious - how was the experience? I heard lots of good stuff from brewers in Charlotte who work at craft breweries here.

    Irish red ale LHB all grain

    Going to say the same thing. Drop the1 lb caro120. My Irish Reds are usually 13 SRM +/- (typical is 10-14 range) Also think the ABV is high for a Irish Red. Usually 4-5% ABV Barley flakes is often an ingredient in an Irish Red as well. Good luck.

    If you are over 60.... Odds are ... You will die before the yeast does. Never do a term life policy on yeast.

    Yeah ... I was going say, the amount you added should be fine... I doubt you even notice. But if you really add way way way too much gypsum, you'll get some wort infused drywall.

    At the end... The HED will be covered in a cake of hops. It doesn't get everything, but don't sweat it. Just let those stray hop flakes go to the fermenter with the wort. It should foculate out with the "clean" yeast for your recipe.
