    Critique this methodology

That's fair. There will be exceptions to the rule, but for most of the time 21 days will be safe. Also, I don't get too fussy with cold breaks or whirlpooling either. I generally use a settling tank to eliminate some of the trub, and then pour through a mesh strainer to catch bigger particles...

    Critique this methodology

I think checking the final gravity is a good recommendation, but low flocculent yeast aren't going to have problems cleaning up beer since they stay in suspension. Especially given his 21 day primary, I wouldn't consider that to be an issue unless there is some other problem going on (stuck...

    Appearance of beer when poruing....

How long has it been under pressure? Could just not be completely carbonated. I know this is bottles, so the process is a bit different, but this video is probably the best demonstration of stages of carbonation that I've seen:

    Appearance of beer when poruing....

As long as it tastes alright, I wouldn't worry about it. Some beers are more effervescent than others. There's also a lot going on with CO2 absorption and release based on pressure, temperature, and time. You might find that next week the beer has improved. Also, unless your beer is crystal...

    Wyeast 3068 hefewisen

Yeah, that yeast is crazy. My LHBS basically won't sell it to you without a liquid foam control. I mean, they will, but they strongly recommend it. I've used it with foam control and it's very manageable. Still pretty aggressive, but I avoided any excessive blowouts.

    oak cubes in bottles?

I think the idea is interesting, but the generally recommended amount per 5 gallons is pretty small - less than 3 oz. I think you'd easily overshoot that mark by dropping a cube in every single bottle. It'll still be beer though, I would probably be impulsive enough to try it with some used...

Comericial Kegerator single tap to double

I did this project myself - it wasn't too difficult. The only real mistake I made was when drilling the hole for the tower I forgot to account for the screw on the back of the light/electronic box at the top of the fridge, so now that's duct taped in place... whoops! Feel free to ask if you have...

Central valley or bay area members

I'm in Pleasanton. Pretty new to the area (moved July 2011 from Michigan), been visiting Hoptech about once a month for almost year now too. JoeBronco, I've definitely seen you there, sharing beer, before! Small world.

Danby DKC644BLS leaking water and ruining my floor.

Can't say I've any problems with my danby fridge that was converted to a kegerator... I have a fan that circulates air into the tower (and presumably creates drafts elsewhere, too) and a reusable dehumidifier (http://www.amazon.com/gp/product/B000H0XFCS/?tag=skimlinks_replacement-20) in there...
