Isolated Yeast (Tree House): How to Identify and Characterize?

:mug: Someone brought up a good point to me in another group. How can we be sure whomever is answering these tweets knows the ingredients? What are the chances Nate is on that account instead of his own?

Isolated Yeast (Tree House): How to Identify and Characterize?

I mixed 007 and 3638 once. I got some weird feedback like earthiness and saison-like. I've been wanting to try 1318 to see what comes out the other end.

Isolated Yeast (Tree House): How to Identify and Characterize?

Indeed. I'll start passing it around later today for more feedback. I have 4 or 5 people lined up already.

Isolated Yeast (Tree House): How to Identify and Characterize?

Update, I just tasted my beer. The mouthfeel is very soft - can only describe it as velvety. It was burst carbed with 40lbs from Wednesday afternoon. I turned the gas off yesterday to let the head pressure dissolve into solution. It has a distinct fruit tang like fresh citrus (not saison-like...

Isolated Yeast (Tree House): How to Identify and Characterize?

I could second this...and test it. I always thought Haze was Citra but the esters were throwing me off. Cascade could fit. (I love Cascade and Centennial) New Zealand variety that could fit: Chinook (we know they use Chinook because SAP, but could be US Chinook in one and NZ Chinook in the...

Isolated Yeast (Tree House): How to Identify and Characterize?

Cool pic. I'm almost certain I taste Galaxy and Mosaic in Green. I'm happy with Citra in Julius, but what other 2 hops? Apollo does fit somewhat...not sure though. I agree they hold up really well. Transit can be rough when a package gets 100* though.

Isolated Yeast (Tree House): How to Identify and Characterize?

I like that you're posting this because I can only imagine what the beers taste like, and are supposed to taste like, fresh. Have you ever tasted a Julius that's been through a 5 day UPS ride halfway across the country in the summer? I'm betting our experiences with Treehouse beers are very...

Isolated Yeast (Tree House): How to Identify and Characterize?

Thanks. I'll know more once it's carbed. For me carbonation can have a pretty significant effect on body and mouthfeel. I mashed at 157 for 60 minutes and fly sparged for 45 min. It was a very slow sparge without rice hulls in this grain bill FYI, but I also double mill my grain. My...

Isolated Yeast (Tree House): How to Identify and Characterize?

Not 100%, no. I'm still going to watch what results others get and I'm open to feedback & adjustments. I'm just not sure what to do without the malt being closer.

Isolated Yeast (Tree House): How to Identify and Characterize?

Update here too. I finished around 1.015 and it's under 40lbs of gas right now (just transferred to kegs). I did 2 beers, one has Mandarina, Columbus, Centennial, and Azacca in it. For some reason that beer came out very peppery (I think the Mandarina German hops mixed with Columbus and T58...

Isolated Yeast (Tree House): How to Identify and Characterize?

@melville I can taste it now. With London 3 or 007 or any of the other handfuls of yeasts I've used, Citra never fit in my opinion. I would say these 3 yeasts have such a complex flavor when used together that I probably was trying to hard to compare apples to oranges. As for the T58 I would...

Isolated Yeast (Tree House): How to Identify and Characterize?

T58 has a touch of spice coming through in the flavor but not the aroma. The aroma is pretty spot on. I'd say it's much closer than my 3638 clone because it tastes and smells like Treehouse instead of a distinct hefeweizen. Even though it's 1.017 it doesn't taste like it hasn't finished. It...

Isolated Yeast (Tree House): How to Identify and Characterize?

I need to check my gravity and taste the beer. As per your attenuation percentages post, I decided to let mine sit a few days longer seeing what it would do. I also mashed at 157* so I'll check it this afternoon and post back. Edit - Gravity at 1.017 and it smells really Treehouse-y but missing...

Isolated Yeast (Tree House): How to Identify and Characterize?

Messing around with my own kegs and beer pressures has led me to believe that higher carb rates are necessary due to the amount of hop oils to retain head. I also feel like the higher carb rates add perceived body and round out or even marry the flavors via carbonic acid.

Isolated Yeast (Tree House): How to Identify and Characterize?

I apologize - I was dealing with work issues and was paying half attention to my post. I fixed the totals in the previous post. 22 grams of s04, but yes I underpitched the wb06 and t58 intentionally. I'll need to play around with fermentation temps on the t58 I think. I don't know why the cans...

Isolated Yeast (Tree House): How to Identify and Characterize?

Yes - another reason for the 24 hours alone in the fermenter. I'll say I've never seen a growth phase as strong as WB06. Even with this massive underpitch, it still had a normal krausen when I opened the fermenter.

Isolated Yeast (Tree House): How to Identify and Characterize?

Looks like Melville could be slightly ahead of me. Fermentation is nearing FG, lest I checked was 1.020 so I raised the temp slightly to finish out. My ratios were: WB06 - 2 grams in 10 gallons for 24 hours @ 74* Lowered temp to 60* Pitched 22 grams of S04 and 2 grams of T58 Let sit at 60* for...

Isolated Yeast (Tree House): How to Identify and Characterize?

No I didn't rehydrate or oxygenate this beer. First pitch was actually about 2g/5gals and the wb06 was bubbling pretty good about 15 hours later. After 24 hours I added 04 and 1.5 grams of t58. @melville I suppose we'll agree to disagree then. The wonderful thing about brewing beer is, it's...

Isolated Yeast (Tree House): How to Identify and Characterize?

I think a lot of flavor comes from the grain, and these ingredients shouldn't be ignored. There are plenty of homebrewers who think NL intentionally misleads readers at times with false information. Whether it's true or not, I have no idea, but I also know that writers tend to take creative...

@melville what does your grain bill look like? What would you say your beer may be lacking as compared to Treehouse?
