    Oxygen won’t affect it unless it exposed to it for a long time. Your brew will still be giving off CO2 which should force any O2 away from the mead. Stir away.

    Hey Redeemer. My first thought was too much tannin. And I don’t really know enough to work out how much is too much. RPh has raised the microbe issue too which may be a thing, tho there is no visible signs of mould etc. I’ll see how things travel in another 6 months or so then.

    I pretty much make a 1 gal brew in a 5 liter carboy. I add honey?water based on the OG i want and mostly add anything more to the secondary. I have found it goes almost to the neck (?), where the line thing is and is easy to manage as it's about right.

    I think the general rule of thumb is two weeks is enough to take all the flavour from the fruit. How can you hate bananas? I can't wait to try this one.

    I have used both. The biggest advantages is the control you have over the taste. With whole fruit you have to live with what you put in, but with the concentrate you can mix to taste to some degree. Also much less mess and wastage with lees. Stay away from purée tho - so much mess.

    Strawberries don’t give much flavor. At all. I would start with some frozen mixed berries if you really want to try it. I started with a straight up mead - honey, yeast, water and nutrients. And I’m glad I did. It has taken a while but it tastes nice now and is good to know what the original...

    Only way to do it is to watch it like a hawk and then whenever you see it start to boil then take it off the heat until it settles. As soon as you take your eyes off it - overflow. The trouble comes when you add water to it. If it is too hot, then yer gonna get the exploding bubbles...
