I'm just finishing up a Voss hazy that I brewed last Sunday. I typically ferment at 82F and it throws less Orange Tang than at a hotter temp. I'm also using Lotus, Mandarina and Belma to blend in that orange. I'll keg it probably Wed or Thurs.... So far, it's orangey but I don't get that Tang...

Which Kveik? If your using Voss, that'll add an orange tang thing. Not sure about other kveiks in a NEIPA...

For some good reading, I would suggest checking out Electric Brewery. Pretty good explanation of how to put together a 3v HERMS...

Without taking the top off, dropping them thru the hole seems your only solution. Next time, for like, $45 you can get a fermonster with a spigot and a cap with a large-ish hole for the airlock... big enough to dump dry hops into....

With some careful purchasing, you may be able to put together a 3V herms system. That won't include a glycol chiller though... and a flex+ will probably put you over your cap. Or talk to @Bobby_M , he puts together a good biab type system Something to think about...

Except, without yeast, what is beer other than hopped up sugar water? It's not beer, that's for sure.

I'm abandoning the lid. I sourced a flat disc of the appropriate diameter so as long as you push it down on to the wort and have a way for the air to escape, it doesn't technically need to float.

One session beer goes along with the theme of "Damp January"...
