    I was just listening to a CB&B podcast featuring a brewer in New Zealand talking about his NZ Pils... the hops he uses and an interesting fermentation profile I've not seen before. Apparently, he pitches at 62F for 24 hours and then drops the temp to ~54F for 24 hours, then brings it back to 62F...

    CellarScience Hazy Yeast Super long lag time

    I have a hazy fermenting out right now, using Hazy. I pitched it Sunday eve, no rehydrate, no oxygenating, just dumped in one pack. No movement for a day, then by Tuesday after work, it had taken off. OG was 1.061 and last night it was down to 1.017... 3 points to go and no weird off-flavors.

    First beer you ever had…

    I remember Dad giving me a sip of his Olympia one day when I was probably 8 or 9... it was before his first heart attack because he quit beer after that. I remember it not tasting like much, ice cold right out of the fridge... I don't recall my first full beer, probably in my early teens.

    Whirlfloc or not?

    If I remember I'll toss in a whole tab if I want a clear beer. As I see it... it's not gonna hurt any thing, it's cheep, and it can only help. I do have the ability to quickly cold crash, so that helps and I'll toss in some gelatin or Biofine if I feel I need it.

    MoreBeer is out of California?

    I'm in the Bay Area and it used to take a couple of days to get my order. But I've noticed their inventory is pretty light these days. I'm using Williams more now and I've also ordered from SoCal Brewing, and they deliver in a few days...

    Getting a handle on cleaning routines

    I use microfiber rags to dry wet stuff all the time, including my SS fermenter. Haven't had an issue yet.... just make sure the cold side gets a good starsan soak prior to use.
