    Someone else posted this: Green Bay Rackers--Mash Calculators It says you can do 1:1 in 4.62 gallons, so even with your false bottom you would probably be ok. You may have to do a triple sparge.

    Don't use champagne yeast unless you want it to taste like wine/champagne. Use a sweet mead yeast or a Cider yeast.
