Something super clean that attenuates pretty well. My vote goes for Pacman if you can get it. Keep that fermenter as cool as you can. Isn't there a high gravity Belgian yeast out right now as one of the special editions? That might be interesting on the cool side as well.

Are you stirring the water in your HLT before taking the temp? When I have my burner going there is a difference top to bottom in temp that will throw everything off. Stirring in the HLT seems to help. Never missed a temp by more than a degree. (I use a spreadsheet for my calcs)
