Cheap pot for full 5 gallon batches

If you have the sanke already, why don't you convert it now and use the money you save on the pot for a burner and move it outside now? Do that and you are <$50 from all grain... IF you like spending money twice, though...check around the 'value' sporting goods stores for a turkey fryer pot...

    Dehumidifier powered fermentation chamber

I'll see what I can do, RE pics, but no promises. The steps for the build went something like this: Build a box with an open top Cut a hole in the front just large enough for the cold side coils to pass through-- I positioned mine so that the unit rides on it's original wheels and the box...

    Fermentation Chamber - A/C or Mini-Fridge?

Whatever you find cheap gets my vote. That even includes freezers if you can find one (I can't since all the hunters around here snap 'em up). Cheap is why I went with a dehumidifier :D

PTN to Houston TX, Nov 1 -6

Pretty much. Remember when dealing with Houston traffic, non-rush hour means 3:15 am to 3:30 am. It could be worse though, they could be sending you to Longview.

How much time to allot for an all-grain brew?

First AG took about 6 hours. Last time I brewed it was 10 hours for two batches (no chill, 90min boil and mash for both).

Pitched the yeast.. been 9 hours and no sign of fermentation.

Good Lord man, quit screwing with your beer, it's fine. Don't even look at it again until the weekend after next (or even three weekends). Let those little yeasties clean up in peace.

    Need Help With Temperature Controls

I'm not sure about your unit, but for my chamber (https://www.homebrewtalk.com/f51/dehumidifier-powered-fermentation-chamber-134315/) I had to poke around just a bit. AC units work by switching a compressor and a fan (or two). You will need to figure that out-- it should be pretty straight...

No tax on it in TX. Brewmasters warehouse or Austion Homebrew ought to take care of you if he won't :mug:

    Exploring "no chill" brewing

I've done just that on several beers now. Sometimes I sanitize the thermometer that came with my turkey fryer and stick that down in the hole-- burp it a couple of times if you think you need to but I haven't found the need. Seriously, in a 6.5 gallon bucket the pressure is like 4-6 psi...

    Refrigerator for Fermenting & Lagering

If it has a compressor it should work (If it has the peltier thingies it could be a little underpowered). Might want to rig up a fan to move some air around in there.

    Blow-Off Tube

Blowoff tube on carboy, airlock on the bucket. Pretty much just for clearance issues on the ferm chamber I built too short (by like an inch ) By the time you figure out weather or not you needed a blow off tube, it's already too late :D OG higher than 1.050? Use the tube-- better...

Why do people use a secondary?

Why use a secondary? Because we're homebrewers and we like to jack with our beer. What good are toys you can't play with? Oh, and because it's useful at times as well :D
