    comparison between yeast brands

    Anyone know of a table or some such that will give yeast equivalents in each line? For example I like Wyeast 3068, but it is much easier to get White Labs here. A table like that would be very useful for me.

    So I was reading the "Complete Joy of Home Brewing," where they state to only use a single mash infusion if you have high modified malt. So... How do I know if the malt I am using is highly modified or not? Thanks,
