    Which Brew Kit?

Really like my Williams. For starting out, I couldn't find a better deal on the equipment. I got the kit with the brew pot and wort chiller.

Tweaking fermenting timeframe due to elevation

Im at 7500' above msl. I used a Williams kit with the liquid WYeast. Started the yeast 3 days prior and it was nice and fat when I pitched it. Prolly could have aerated the wert in the fermenter better. Plus side is, the temp has been steady 68* Should be perfect for the London Ale yeast...

Tweaking fermenting timeframe due to elevation

I can only assume that elevation is having a decent effect on my fermenting. It took two full days before the air lock started bubbling. I talked to another homebrewer here in Mexico City and he warned me of the lag time. So, it sounds like that is common. My question, should I extend my...

    When to check OG?

I am a little confused when you should take the OG reading. Right after you fill your fermenter and before you pitch the yeast? right after you pitch yeast? When?

    Cooling fermenter

So I got a thermometer in the spare bathroom (where I plan to keep the fermenter) and I am getting a pretty steady 70-72* reading. Is this too warm for ales? I guess I will need to do the swamp cooler method?

    Cooling fermenter

I read the Home Beermaking book by Moore that came with my Williams kit and he mentions that a tip to cool the fermenter from 1-5* is to set in a water tub and wrap a towel around the fermenter to cool it by evaporation. My question, will this cause a problem with my spigot on my fermenter...

    williams sanitizer

The problem with Mexico water is that in areas especially in the DF, they had the brilliant idea to run water lines next to sewer lines...you get the picture. We use bottled water for everything. I have used tap, just boiled it and or used a UV light on it to purify it. Cant comment on water...

    williams sanitizer

So I just got my Williams kit and was planning to brew on Sat. However, I read on the sanitizer bag that you need to rinse equipment before use. http://www.williamsbrewing.com/BREWERS-EDGE-OXYGEN-CLEANSER-P3402C58.aspx Problem is, water here in Mexico is not the best. As in, I dont drink...

    Cheat Sheet for Extract Kits?

I was browsing the brew catalogs for my next extract kit purchase as well as reading the brew books (joy and How to) and had a few questions. Is there a cheat sheet for the different beer types and what is necessary? For example, which beers ferment best in 75* temps, which ones need...

About to pull the trigger on a kit

Got my kit today! Now I cant wait for Saturday. Should I put the liquid yeast in the fridge until then or leave out in room temp?

DME in kits or just LME?

Its different regs for me, not physically in the US, but have a US mailing address.

DME in kits or just LME?

Quick question, are there kits with DME? We have a liquid restriction for our mail and I want to see what my alternative is if LME wont make it through. If there are not DME kits, I assume I would have to go off of recipes to know what to order?

About to pull the trigger on a kit

Thanks for the help fellas. I went with the Williams Complete 32 qt kit. I will be able to do full boils and it will fit fine on my gas stove. Now for FedEX to show up.

    40 qt on gas stove?

unfortunately, no. I am in Mexico City, not much home brewing going on here.

    40 qt on gas stove?

OK, so I am thinking of going with the Williams kit that includes the 40 qt pot with spigot. http://www.williamsbrewing.com/COMPLETE-HOME-BREWERY-WITH-40-QUART-BREWKETTLE-C257.aspx My only concern is will the 40 qt work OK on a gas kitchen stove? For now, i will only be doing partial...

    Brew pot with spigot?

I am asking because I am trying to decide which kit to buy. I see williams has a SS 40 qt pot with spigot included, they sell the pot separately for $99. http://www.williamsbrewing.com/COMPLETE-HOME-BREWERY-WITH-40-QUART-BREWKETTLE-C257.aspx

    Elevation

So do you boil longer at each stage to get hop utilization. For example, instead of 60 30 and 5 minute hop boils, do 90 45 and 15?

    Brew pot with spigot?

I'm am planning on extract brewing. Is a spigot on the brew pot worth the extra cost? Don't you get more aeration by pouring into the fermenting bucket than from a spigot?

About to pull the trigger on a kit

Ah he'll now I am thinking of the Williams kit. I like the spigot idea on fermenter and bottling bucket.

About to pull the trigger on a kit

After reading some more on here I may just get the 2 bucket kit and order a 6 gal BB. Unless I can substitute the 5 gal BB with a 6 gal BB. I am going to go with an aluminum pot. I am looking at the 32 QT one from Amazon. I am saving my swingtop bottles as well, but will go ahead and get a...
