    What size co2 tank should I get?

    Get he largest size, much cheaper per Lb of CO2, at least where I get them filled. Just had my 20Lber filled at a local welding shop for $25!!! Street price is $27.50 but I am a welder, among other thing!

    What's Your Fermentation Capacity?

    I ferment in Sanke kegs and can fit two half kegs and at least two possibly three tall quarter sanke kegs in my fermentation chamber all at the same time. Most I ever had in it was two half kegs and two 6 gallon better bottles. Only one temperature zone though so future iterations might change that.

    OK, now I think I understand your point. Had you used an iodine test you may have stopped mashing at say 90 minutes and end up leaving a lot of convertible starch/sugars behind. Is that it?

    That sounds like a very good idea. I have a refractometer and just started a mash literally 3-4 minutes ago. At the risk of sounding stupid or lazy, can you explain how I could calculate the expected gravity for my grain bill? I'd like to try that technique.
