    Thanks to both of you! So I literally just pour juice into a pale and add yeast? Do I need to sanitize the must or anything?

    Anyone have a simple cider recipe I can make in a regular 5 gallon pale? I have a preference for pear, but I'd try whatever is easiest. And ideally I'd like to use "Lalvin EC-1118" yeast.

    I'm just using a hydrometer, and I've been factoring in temp. I'm also wondering if carbonation can interfere with hydrometer readings. The one that's going slower has alot more natural carbonation
