    "historic" Belgian parti gyle process?

I've been seriously pondering a parti gyle for 15-20 gallons. In my limited understanding, tripel was first runnings, dubbel was second runnings and enkel/patersbier was third runnings. It would a ridiculously long brew day but could be a lot of fun. My hope is to throw a quad in there too...

    Sub 1.030 beers

I make beer w my starters. Pitch one vial into a low gravity something, in style or not, and at the end of primary I have plenty of yeast for a big brew. Last time I did a cream of three crops with a British yeast, I think, in preparation for a IIPA. I end up w five gallons of something yummy...

    What's in your fermenter(s)?

We made a hard cider, very dry and a bit sour, last year. Just cider, apple juice concentrate brown sugar and yeast. It is not my best brew and a bit rough still, it was best at about 6 months... Currently I'm mixing it w a sweet tepache, real good mixed! I just brewed a 1 gallon batch of...

Homebrew Supply Mail Order Companies that Haven't Been Bought Up?

I like adventures in homebrewing and have ordered from morebeer in the past as well. Both are great.

What temp did you mash at? I'd venture to guess 155 for residual body...

    What's in your fermenter(s)?

6 way IPA. Really just experimenting but I divided a 6 gallon batch into 4 litre wine jugs. One gallon each on toasted oak, .25 oz Toasted cherry, .25 oz Toasted cherry with bark on, .25oz Juniper vodka, 4oz Homemade spruce tips extract, like I do for spruce tip soda, 8 oz 1 gallon left alone...

    Gunslinger's Graff

Any thoughts or ideas on making this lighter in color? I'm thinking 1 can Amber, 1 can light LME 5 gallon apple juice, maybe some crystal 60 for residual sweetness...

    What's in your fermenter(s)?

10 g honey weisse w two different yeasts, T-58 in one bucket, Munich in the other. 5 g coffee porter w Windsor.

    Single hop IPA

I like the idea of splitting the wort. I don't think I'd want 50 bottles of a combination that turns out nasty. You could even split it after boil and try different dry hop amounts in different fermenters. See how much nose comes through with .5oz, 1oz, etc.

Just read about the "roots of root beer" and immediately thought of this thread. Homebrew hard root beer around 3%? Sounds good to me! If you do the parti gyle effort above you could do a long boil to up the non fermentables like a wee wee Scottish w root beer spices...

What came in the mail for you today?

4 Mangrove Jack kits. Never tried them but I figure they'd be good for experiments. $16 each at adventures in homebrewing for 6 gallons of beer. I'll be asking for input when I get to them but I'm excited for a honey brown.

    Stuff Shoved In Beer...

Shot of spiced rum in a red ale is nice. Tried it out once after I saw a red ale aged in rum barrels . Couldn't get that so made my own! A full shot is a bit much, 3/4 oz is just about right to my tastes. I wonder if instead of brewing a bourbon barrel porter or whatever you could just assemble...

Cream Ale Cream of Three Crops (Cream Ale)

I just used the store brand instant brown rice (Hy-Vee around here). Thought it might add a depth of flavor but nothing I noticed.

Cream Ale Cream of Three Crops (Cream Ale)

Water here is just too chlorinated. I use 2 gallons boiled tap and the balance RO water for a 5 g batch. Works great so far.

Cream Ale Cream of Three Crops (Cream Ale)

While I'm not sure if esters or noticable hops are really in line w a traditional American Cream Ale, it is a good base to experiment with. When I brewed my 11 gallons awhile back, I did 5gallons with 05, 5gallons w T58, and 1.25 gallons with sage and 05. I pulled off 5qt of the beer after...

Cream Ale Cream of Three Crops (Cream Ale)

My 10 gallons are conditioned and tasty. The 05 batch is a good clean beer, easy drinking. The T58 batch is outstanding! That yeast in this beer is just amazing. Not an American Cream Ale anymore, but a damn good beer. 05 batch finished at 1006 or so, 5.78% ABV, the T58 finished at 1004, 6.04% ABV.

What are your contrarian/"unpopular" beer opinions?

I love session IPA. Yeah, it's a marketing ploy but it is some tasty beer. Point brewery is one I thoroughly enjoy. That and marketing plots are not necessarily a bad thing. I like the pretty cans!

    What are you drinking now?

Great Divide Scottish ale and an Otra Vez picked up for $4/6 pack
