    Why the rush?

Meanwhile most of us have yet to acquire a taste for stale beer-despite the major players at BMC trying to sell us on it. We prefer it fresh and at its peak taste, aroma, etc.

    Why the rush?

    Agreed.

    Why the rush?

Mine do as well Yooper, yes primary ferment in 4-6 days. Though I will fully admit that I strongly eschew a lot of “traditionally accepted” lager brewing practices and have tuned my process and practices based on trial and error, my equipment and preferences etc. How I (Yooper or anyone else)...

    Why the rush?

As usual the wisdom of Yooper rings true. I use quality ingredients, pitch right and have my beers finish in 4-6 days typically, including lagers. 3-5 if I keg and spund. Once there, a few days spunding and at d rest temps and in the kegerator they go. It’s not a rush or a race to anything if...

    Paulaner and Hacker Pschorr Oktoberfestbiers

While also maintaining their bottom line-as I alluded to based in the mention that the Tradition could be a strain specially grown for them-that in order to maintain it the hop grower may have gotten them to contract for their Herkules crop as well.

    Paulaner and Hacker Pschorr Oktoberfestbiers

I assume you mean Herkules? Paulaner list Herkules as the hop they use, not Taurus.

    Paulaner and Hacker Pschorr Oktoberfestbiers

That’s the advice I had gotten previously and read previously on traditional German hopping, it makes sense for this application so I think I’ll go with it. The Herkules surprised me too, but as a bittering addition it wouldn’t impart much flavor so perhaps there is an economic or contractual...

    Paulaner and Hacker Pschorr Oktoberfestbiers

I probably should have quoted you when I asked my question above, any info given by your source on the hops schedule in the Paulaner? Thanks for the insight.

    Paulaner and Hacker Pschorr Oktoberfestbiers

Discussions of the grist aside, was there any indication of the hops schedule for the Paulaner by Bryan on the site? I know what they list as the hops used and I’m guessing the Herc is a 60 minute bittering, but what time do they add the H.Tradition and how much? thanks in advance for any info!

New Holland Lake and Trail hops-recipe?

Looking to see if anyone out there has any knowledge on the hops and schedule New Holland uses in Lake and Trail? They’re really clamming up lately on their site and with any info at all on ingredients-not really sure what they’re afraid of... Either way, I’ve approximated the lager recipe as...

Which charcoal smoker do you have?

I just use my 22” Weber kettle grill and lay out my charcoal and wood based on the (Weber/Kingsford) snake or fuse method. Doing a brisket today with it actually, started the charcoal at 4am and it’s been running steadily since between 240-260F, it’s a great method that does not require a...

Anybody make the Oberon kit from Bell's?

I have the Bells recipe and a fresh pack of Imperial A62, the Bells house yeast ready to go on Saturday. Going to run this one on the warm end of the recommended temp range (72F) for maximizing yeast eaters and then spund in a keg when it’s nearing FG for some natural carbonation and see if I...

    Who's smoking meat this weekend?

I smoked this pork butt a couple weeks ago, took about 15 hours. This Sunday is a brisket, need to be up at 4 or so to start it, but by dinner it should be worth it!

hops from the forest, gonna brew a very simple beer to dryhop and see if they're any good.

You could also make a small hop tea with them to see if you think the flavor will be compatible with your brew.

    Sterling hops production

In my research you do need to prune the bines and actively select the ones you want to grow yes, in fact there are bines that grow that will not produce any cones at all called "bull shoots" that should be identified and pruned out early on...

Best way to vacuum seal homegrown hops?

YouTube homebrewer DrHans has a home grown hops video series. He managed to fit 100g of dried hops into a large (11”x15” approx) bag-that’s about 3.5oz. I’d think you’d be hard pressed to get more than an ounce In yours.

    Anvil Foundry w/Beer Smith

Oginme hot on a lot of my thoughts. mom addition you have to realize that BeerSmith doesn’t know your using a Foundry-you have to tell it what your brewing “profile” is , once you figure out hot to input the info on the Foundry into BeerSmith itcan then be modified to use the Anvil method or...

    Drilling lubricant

100% agree on Tap Magic, even the original/standard stuff is far superior to any other substitute. To the OP, that spray looks to me like a dry film lube due to the PTFE(Teflon)-sprays like that are meant to be sprayed on and left to dry, leaving a lubricating film of the PTFE there for future...

    Online grain

I’m going to go on my own here and suggest you look at AIH, Adventures in Homebrewing. They are an excellent LHBS and an amazing online retailer for whatever you need as far as brewing goes-their prices are second to none especially when things are on sale (used corny kegs for $39!) and their...

Help! Candi sugar always freezes/crystalizes at 270F

My first go round with trying this was to use some leftover bottling sugar for it and it failed miserably much like you are describing. My lead chef (SWMBO) was not pleased that I had given her improper ingredients and I was regulated to cleanup duties while she did a second batch with table...
