I (sort of) made sausage and now need advice.

I (sort of) made sausage and now need advice.

Hi! Thanks for reading. SWMBO and I bought a boat-load of sausage at a meat sale for a very low price. Then we cooked some of it and hated it. It was very low in seasonings and tasted more like plain hog meat. So, I looked up a spice blend recipe and mixed it all throughout the thawed meat...

The New Revolution in brewing … courtesy of Johntodd

http://www.amazon.com/gp/product/3117954011/?tag=skimlinks_replacement-20 There ya' go! Mine is one of the less-expensive ones. They really are a Godsend in the kitchen, both for cooking and brewing! That's how you know God sent them to us and wants us to be hapyp! LOL. No offense. -Johntodd

Well, I tell you: the hops tea was plenty bitter. I tasted it with a sanitized spoon to be sure. It seems the pressure cooker has no problems making it convert and then extracting it. But that doesn't surprise me about the PC. Because of the higher pressure in the chamber, it's like a "time...

I bet this would be great for a lot of smash beers.

I haven't noticed a difference with the carms - but I really think my brand of DME just 'clicks' with me and my tastes. The dark DME I use has a fair amount of dark malt and even black malt. IOW, the carm flavor still seems to come through for me. I like malty beer. As for the smell, wait till...

Thanks! I do use buckets for fermenting, just like this kind: http://www.eckraus.com/6-gallon-poly-fermenter-complete.html But, I can see putting 2 gallons and the dme into a carboy with a solid plug and mixing it by vigorous shaking. I've never used a carboy; it seems hefty but not too...

Hey extract brewers! Check THIS out! OK, the title was just to grab attention. I just wanted to share my experiences with the cold-brewing technique. I got tired of boilovers and clumping DME, as I detailed in another thread. So, I decided to take a risk and do a no-boil brew. Now the...

I used the zest(s) instead of peel.

    SWMBO wants citrus

As for the ABV, I am always over my OG and under my FG when making beer. Still haven't figured out why; just lucky, I guess (free alcohol)!

    SWMBO wants citrus

Here's the recipe. I did not create it. I'm sorry, I forget where it came from. Props to whomever wrote this! HOME BREW RECIPE: Title: SWMBO's Witbier Brew Method: Extract Boil Time: 60 min Batch Size: 5 gallons (fermentor volume) Boil Size: 1 gallons Boil Gravity: 1.344 Efficiency: 35%...

    SWMBO wants citrus

Update: So we're about to kick the keg on a Witbier. This was delightful! Orange and lemon zest, coriander, and lots of wheat. ABV ~11%. Will brew again! Thanks so much for all the help! -Johntodd

DME into cold water in fermenter

Thanks, I will post more when details come in. Right now, it's still fermenting! This is day 11 and I'm still getting slow bloops through the airlock. It smells great, and I think it's going to work out nicely. So your DME method is like mine? Put it in a sanitized fermenter and stir in...

DME into cold water in fermenter

OK, I did it. I've tried my new method. I used a pressure cooker for the hops (10 minutes), put 3 gallons of cold tap water in the fermenter and whisked in the DME, pitched a gallon of starter, added the hops tea (from the PC), topped up to 5 gallons, whisked to aerate and mix. So far, so...

    2016 Hop Growing Thread

Looks like sun spots. Any chance you irrigated when the sun was shining? Never spray water on plant leaves during the day. The droplets act like magnifying lenses and burn holes in the leaves. (Of course, if it is powdery in any way, then it's not sun spots.)

    Tertiary ... please double-check me.

I'm kegging. I went into it like this to establish my first pipeline. Both kegs are currently full and I anticipate at least a week before one goes light, but 2 weeks could happen, too. If I were to purchase another keg, then might I keg this beer (after 2 weeks tertiary) and then put it in...

    Tertiary ... please double-check me.

So I've made an "Imperial Chocolate Cherry style Stout". Notice my use of "quotes" and the word "style"? It's because: A) I've modded the recipe based on what I had available, and B) I've never had Imperial anything, so I wouldn't know if it tastes right! :D Anyway, I fermented it for a...
