    Mixed Drinks

Classic Honest-to-God Daiquiri - manly enough for Hemingway. Another 2:1:1 traditional sour like the Margarita. 1.5 oz white rum/rhum .75 oz 1:1 simple syrup .75 oz fresh squeezed lime 1 dash Angostura bitters (optional) Shake and serve up in a cocktail glass. Drink quickly. Repeat...

What temperature to use for figuring priming sugar?

Yes! For some reason the tables and the nomograms confused the crap out of me until I remembered that the fermented beer was more-or-less already saturated with CO2 - the solubility of which is a strong function of temperature. Maybe due to my own poor reading comprehension but I didn't get...

Do you call in sick if hungover?

Not all of us can manage that. Blowing anything measurable brings all sorts of misery from my benevolent overlords. Not worth a sick day though - best used for catching up on training and literature reviews _from home_. Or at least I understand that's what my peers do when feeling a little...

    Best way to make labels

My labels are boring - just text on white paper. I have a spreadsheet set up. Put in the various info at the top and below 9 labels are magically copied. Laser print on 25% cotton paper (the really smooth stuff doesn't stick well for me) and glue on with nonfat dried milk. I'm going for...

    Label adhesive

Dry nonfat milk (with water obviously). I've found that the smoother copy paper doesn't stay stuck. I found some 25% cotton paper laying around and it works great. It's the stuff you get at Staples for 8 cents/page. More than the cheap paper but it probably won't kill your profit margin

Love Series 32A controller for fermentation control?

I'm using those but I decided to use a solid state relay to do the 120V switching. Only using the controller to switch 12V, from the same source feeding the controller. http://www.amazon.com/dp/B005KPGPU4/?tag=skimlinks_replacement-20

Question about Wyeast 1469 West Yorkshire Ale yeast

Doing the Innkeeper kit from NB. The blowoff at 64F was like a crime scene. Not like a scummy wash - serious handfulls of full density yeast goo. Crazy and a little bit scary! 10 days later at a 64F pitch for 2 days then 1F/d ramp to 70F and there's still lots of stuff at the surface. A...

    English Mild

I was wrong - twice! It was the NB Bitter not Mild and it did not have sugar. The AK47 did though. Living life on the mild side...

    English Mild

Did the Northern Brewing mild and the AK47. Both seemed thin compared to other similar extract recipes (scottish 60 and an ordinary bitter from Santa Fe homebrewing) that I've done. The NB extract kits all had a half pound or more of sugar - that's a significant portion of the fermentables for...

New Bike....Husband of the Year Award...

Both ASRs feel a little slack in the headtube compared to my old XC hardtail. With my limited skills it's a little bit wandery on the up but I feel like a hero on the downhills. You can lock the rear out for long grinds uphill but I don't really bother. Monster climbing traction when you stomp...

New Bike....Husband of the Year Award...

The team colors rock. 2 yetis in this house - ASR and ASR-5 Carbon. Even the XC bikes descend great - I bet the 575s make heroes on the down.

    Mild!!!

For those of us with a keg system and a self-acknowledged lack of restraint - mild is KING! Cheaper batches and we can claim to be snobs turning away from mouth-withering IPAs towards subtle brews that reflect the maker's care, love and yeast-stroking. (sort of joking but a brewer of lotsa'...

    Why all the crazy beers?

Amen. If the test of a cook/chef is a simple omelet, wouldn't a test of a brewer be a simple low gravity ordinary bitter? Anybody can do it but how many can do it really well? Just poking everyone else - I like milds and bitters so that's what I brew. I'm a simple guy.

    Favorite Bottle to Recycle?

750mL "Champagne" bottles from Gruet (great value sparkling wine from NM, traditional method so heavy and will take pressure) seem to take the same old crown cap that the usual 12oz beer bottles do. "but dear wife - it's Sunday - we need empty bottles - have another mimosa..."
