    Why pasteurize?

While I personally wouldn't pasteurize it is worth noting that the nhc winner for traditional mead this year heated and held his honey at 160 degrees for 20 minutes.

    Accidental Fermentation. Advice?

I was referring more to the process commonly used to quickly sour saisons and Berliner Weiss. By adding grain to warm wort lactobacillus can grow and create lactic acid for a mild tartness. Many other things can grow during this process and with you not controlling temps or purposefully adding...

    Accidental Fermentation. Advice?

This is a joke right? You boil out dms every time you make beer. Check out the flammability temperature it's twice the bp of water. I definitely wouldn't dump this, sounds like an unintentional sour mash. Boil it up soon add some hops and it might just be worth keeping.

One thing I would change is to limit the types of hops by cutting the citra dry hops as these are fairly different from the boil hops and you already have three types going on. That's also a whole lot of caramel malt, I would cut out a pound of both the caravienne and...

    Question about using harvested yeast

Shouldn't be an issue, I reused the yeast from my last Belgian IPA twice with no noticeable hop carryover.

    What does this percentage mean?

15% of the grain bill (by weight). For example 1.5 lbs of this with 8.5 lbs of 2-row for a total of 10 lbs grain.

    last night's commercial beer experience

From what I remember the pack was as follows: -Irish Red: Decent but I prefer Smithwick's. -Black Lager: Again okay, but not overly exciting, haven't had others of the style -Oktoberfest: Malty and drinkable, not amazing but a solid beer and fairly typical of style -Pumpkin Ale: Not a fan...
