    Anybody else using BKYeast's Cantillon Brett?

    The beer I made was actually mostly Maris Otter after seeing the description on the blog. OG was around 1.049 and the beer reached a FG of 1.010 after about a month (was down to 1.012 after about a week but that next month both brought it down a couple points and really enhanced the flavor)...

    Anybody else using BKYeast's Cantillon Brett?

    I made an all Brett beer with the C2 after stepping it up with a few starters. The flavor seems pretty similar to what BKYeast described it as (wild strawberries) with some berry fruitiness mixed with woody character and a little sourness.

    What I did for beer today

    Yeah, I will probably just use that next time, depending on how well the beer comes out with the homemade version. The burn was only a few spots on my arm and a tiny drop on my face, could have been much worse. Note: non-boiling sugar can still be hot enough to boil water explosively when mixed.

    Also used some of the second mash wort to make a starter for my Marylambic wild yeast project. Oh and burned my self pretty badly with home made candi syrup.

    Brewed a Belgian quad in my new mash cooler. Missed my efficiency badly but did a second mash for a small beer that ended up near 1.050 OG. Should be nice to have two Belgians to try out.

    A few weeks ago I had a bottle of my hefeweizen explode in my closet. I had only ever had one other bottle bomb (also a hefeweizen) which I had determined was due to using a cider bottle that wasn't meant for the pressure of beer. Well today I had another from the same batch give me a scare...

    Can I Mix yeast?

    I use a mix of Scottish and Nottingham yeasts in a few beers. Seems to leave it a bit under attenuated like the Scottish but a little fruity like the notty. Works well in my sweeter porters/stouts. Long story short you can mix them but you could get the worst of each or something quite different...

    Brewing an all Brett beer. The base is similar to a best bitter. It's a British Best Bitter Brett Beer.

    What I did for beer today

    Well right now it's just a pretty basic milk stout recipe except with hefeweizen yeast but I'm planning to add actual bananas in the secondary if it seems appropriate and everything goes well. How did you do yours?
