    Any idea why FreshHops.com thinks 8oz is .72lbs? Are they really this bad at math or are the 1oz packages really more like 1.5oz? If not $43 for 2 pounds of hops plus shipping is a terrible deal.

    Since you're only mashing 7 pounds of grain you may try using a pasta strainer or colander on top of the kettle to set the bag in while it drains. This should keep the dripping wort in the kettle and off your floor.

    Personally, I wouldn't do it. LHMS is already quite sweet, I would think the vanilla would make it even sweeter tasting. I find vanilla is better in a more coffee oriented dry stout. Maybe split the batch and test it.
