    how many rackings

Depends on how long it was in primary. While it's there you might as well let it sit and bulk condition for a couple of weeks. That will allow eveything to compact into the bottom. Yes, when you move it your bottling bucket make sure you keep the the auto-siphon uo off of the trub so you can...

    how many rackings

Just one more to the bottling bucket or keg. For future refernce you don't need to rack to secondary to get a clear beer. In fact many people never use a secondary. As a practice I leave my beers in primary for a minimum of 3 to 4 weeks. I only secondary if I need to dry hop.

    All Grain Questions

I have a SS false bottom and it works great. I've never had a problem with and I consistently get 75% efficiency.

    Fermentation / General Question

Go with a neutral dry yeast. US-05 come to mind.

    Stalled / Slow Fermentation

The only way to know if your beer is done fermenting is to take a hydrometer reading. Go do that and then report back what the current gravity of the beer is and what should be your anticipated FG. Also, it is ok to leave your beer in primary for several weeks to allow the beer to finish...

First AG batch - OG a little high

I should also add that it is important to take a pre-boil hydrometer reading. Make sure you cool the wort to around 50* I stick one in the fridge for a few hours. Then go to this site and plug in the numbers. This will tell you what your efficiency is for that brew. Then over time you will begin...

First AG batch - OG a little high

When I first started AG I was having similar issues with always missing my OG on the high side. Over time what I learned is that my sysem was more efficient than what the grain bill was designed for. So in beersmith I started playing around with recipes and the brewhouse efficiency. What I found...

    Thanksgiving smoke thread

I will be smoking a large Turkey breast and cooking one normal in the oven. I have some partugyle that never turned out and I may use it as my brine. I have access to all the apple wood I can use so I may go pick some of that up this weekend.

    Repitch or bottle?

"You say primary fermemntation went great", what was the gravity reading you took after primary? You may very well be at terminal gravity and wouldn;t necesarily see any signs of fermentation. Additionally, it may be fermenting just at a very slow pace. The only real way to know is through...

    Filtering to Secondary

No need to filter. Let the beer sit in primary for up to 3 or 4 weeks (depends on the OG). Hogh gravity beers you can let sit in primary longer. The longer primary will alow the yeast to clean up after themselves and allow the trub to compact. When you are ready to transfer make sure you keep...

    Most aggressive yeast strain?

Second 3711. I'm going to try it on a high gravity beer soon.

Seems some people are very "intense" about their brewing practices

Yep. I get lectured by my LHBS somtimes when I mention techniques like leaving in primary for 3 to 4 weeks. As a matter fact a few weeks ago I got this very lecture. I just nod my head and go on about my day.

New to All Grain/have a few questions

I would recommend the 10 gallon mash tun. With a 10 gallom MT you easily do high gravity beers. For example the Wee heavy I am brewing tomorrow calls for 23 lbs of grain and I think 28 quarts of water no way that fits in a 5 gallon. My current setup is simple. 10 gallon mash tun 10 gallon...
