    Yes it is O.K. to unhook your CO2. I would like to point out that when you force carbonate keg some CO2 is desolved into a liquid (beer). So next time attached CO2 to the keg you will hear CO2 going into the keg. This will happen until beer is fully carbonated and pressure equalize.

    Someone said that the flow rate should be somewhere between 40 sec to 1 min for 1 qt of wort out of your MT. Do the math: 7 gal pre boil = 28qt 1 min X 28 = 28 min to empty your MT
