    Pale malt substitute in APA

Hey everyone, I'm planning on brewing an APA on friday. I'm going to the HBS tomorrow but they've ran out of pale malt. I was thinking of substituting it with a 50/50 mix of pilsner and amber malts, do you think this would work? Here's the grain %'s: 33% Pilsner; 33% Amber; 23% Wheat; 11%...

Dry hopped brown ale - infected?

So my last batch was an ABA that I dry hopped (with cascade). I bottled it about 5 days ago, but now the top of the bottles looks a bit hazy. Could this be just a mini-krausen, combined with the hop oils, or could it be an actual infection? There isn't any clearly visible fungi though...

Someone tried doing it a few years back: http://www.thebrewingnetwork.com/forum/viewtopic.php?f=6&t=11043

    Oatmeal Stout Milk Oatmeal Stout

Here's mine, I added an extra pound of crystal 60l because I thought I wouldn't be able to find lactose anywhere...but then when I tried it it was pretty bitter so I ordered some lactose from ebay...turned out pretty nice though.

Anyone got an extract recipe for a hoppy brown ale?

I went to Singapore last month, and went to a great brewpub (Brewerkz in Clarke Quay, if you go to Singapore it's a must see) and they had an awesome brown ale (balestier brown ale, http://www.brewerkz.com/node/345). It tasted slightly roasty, had a nice body and great american hops aroma and...

Yes, another 'yeast at bottling' thread!

So I've had this milk porter/stout thingy in the secondary for about 6 weeks at around 61ºF room temp (for various reasons I wasn't able to bottle it yet). OG was around 1.045 and finished at 1.012, fermentation lasted about 10 days, and I used safale s-04. My question is, do you think I'll be...

What I did for beer today

Went with 30 uni colleagues (I'm finishing my degree on biological engineering) on a tour in one of the two main portuguese macro breweries. Eventually I told the tour guide I was a recent homebrewer (pretty uncommon thing around here) and she called the brewmaster and had me explaining...

Secondary for Vanilla Chocolate Oatmeal Stout?

I have had this on primary for 8 days and I was planning on leaving it there for about 15 days, then racking on top of the cocoa and the vanilla whisky extract and leave in secondary for 3 weeks (I won't be home during these weeks) Would this be too long? But since I've read stouts don't...

    Black Patent for color?

For my second extract brew I'm planning on making a simple APA, but since I'll have some extra black malt I thought it would be cool to tweak the color a bit (so a not so pale APA...). How much black malt should I use in a 5 gal batch just for color without adding noticeable flavor? I'll also...

    Oatmeal Stout Milk Oatmeal Stout

This will be my first non-kit batch. Unfortunately I had to make some changes: -No lactose, so no milk. I just can't find that darn thing anywhere. -Safale s-04 instead of notty -East kent goldings 6% (about 1.6 oz @ 60 min since I'll be doing half boil) -LHBS didn't have chocolate malt but...

    Help needed - Hops chart

I think I'll actually work with that beerlegends chart (for aromas at least), thanks for that. My concern in doing this was mainly because of the cohumulone content when substituting bittering hops. Correct me if I'm wrong, but I read somewhere here that, when choosing a bittering hop sub, the...

    Help needed - Hops chart

Nice chart, very comprehensive, thanks! But still, I'd like to understand that first chart so I can use a hierarchical clustering algorithm to group hops varieties according to aromatic and bittering properties, and make some nice and easy to understand graphs to see which hops are more...

    Help needed - Hops chart

Hey everyone, you probably know this chart already: http://hopschart.com/zoom.html Since my LHBS doesn't have a great variety of hops it would be useful for me to have a quick reference guide to hops substitution, so I decided to make my own based on this chart, since most hops subs charts I...

Extract first timer and recipe opinion

I'll be doing a half boil, so maybe 2.5 oz cascade (7.3%) ? I'll use 5.5 lb light DME then. Won't a pound be too much for those grains? I've read somewhere to keep it at less than 17% The thing is most of the recipes I find use quite a few ingredients I don't have access too...but I'll...

Extract first timer and recipe opinion

Hi everyone, I'm hoping to start brewing with extract soon, and have "designed" a recipe for my first extract brew. I used brewtarget, and it predicted something american stout-ish (according to OG, FG, color, ABV and bitterness). Homebrewing is somewhat unknown in Portugal (there are 2 HBS...
