    Are you folks adjusting Sparge Water pH? I've only ever done all my salts in the mash, but after listening to a recent Experimental Brewing podcast I'm wondering if I shouldn't try it. I use brewfather so it would be easy enough.

    Infection taking over and I'm at my wits end

    I had a similar issue and couldn't nail down where the infection was living. I cleaned and sanitized everything and it sill persisted. I eventually figured it was in the counterflow chiller. I always run hot wort through it for 10 min. before chilling, and run hot pbw and rinse through it...

    That's fantastic that they've increased cell counts. Between Escarpment/Omega/Imperial there is no reason for me to consider White Labs anymore (not that I have in many years).

    I have to say, Columbus is awesome in NEIPA. I've started doing 3 oz. of Columbus in whirlpool, and then 6 oz. dry hop of a totally different hop (last time was El Dorado), it was amazing.
