    malt extracts

I did a quick search, and found nothing. Does anyone know where I can find what exactly is used to make amber and dark malt extracts. I'm an extract+grains brewer. I read somewhere that when making darker brews, it's best to use light malt extract plus darker grains to make dark brews (ie...

    Beer in luggage

It's probably too late now, but for future reference, pack them good and UPS them, marking the box "this side up", and "fragile". or "glass". I was a member of the Beer of the Month club 10 or 12 years ago, and never had a broken bottle. Ship with a little lead time, and have family put in the...

looks like a job for isinglass

Amen. I don't make beer to look good, I make it to taste good. If you do everything right, it will, but big deal. I have yet to read anything that said a beer tasted bad because it was a little cloudy. Do you buy a cd for the artwork, or for the music?

    bread yeast

Just as a sidebar, if you screw up a beer, but it's still drinkable(?), don't dump it, or not all of it, unless you need the bottles. As someone who loves to grill, beer makes a great base to marinate in. Even a borderline beer, with herbs and spices will make a piece of meat tastier on the grill.

    Chances Of This Working

A huge portion of food and drink we buy are packaged in plastic, and, if I'm not mistaken PET is one of the better ones. I drink milk, juice, and soda out of plastic containers, and most condiments are packed that way. I store all of my leftovers in either Tupperware or Ziploc bags. If I grow...

One Step in my Wort! Please Help!

You guys are being way too cruel, but the situation was laughable. How do you know that the assistant wasn't Trappist Artist's 10 year old son that religiously fills bottles while I, sorry, he, caps them. Just because it's a cleaner doesn't make it toxic. By your responses, I bet a few of you...

    cherries & chocolate

Thanks brewva. my plan is to add cocoa, lactose , and maltodextrine to boil, and add cherry concentrate(about 8 oz, due to pior posts) to secondary (and it is pasteurized, if you were wondering). And fly from there.

    Lemons and Limes in Beer...?

Because that's the way other's make them............I assume limes in mexican lagers (because Americans put them in anyhow), oranges in Blue Moon (it's in there anyhow)Apperently the drinking public like lemon in American honey beers. Fight it, or make something better. You make what you like...

Why does this beer have no flavor?

I think everyone is being very nice. What are you comparing this to, to say it has no flavor. Best I can see, this is a very plain ale. Add some grains to your recipe, roasted, biscuit, munich, something to add some flavor. Don't use a neutral yeast. Use a 1099, or a 1335. Something to add some...

First Boil - More questions than answers

"One last thing... if you are pouring hot wort into a strainer or something, you will add oxygen to the wort and your beer will go stale faster than if you cooled it before getting any air into it." I'd take this comment with a grain of salt. I don't know if he means boiling hot wort, but my...

    Malt Extract Trippel

OK. I reread, and read too much into it. So, what is "a little more yeast"? Another smack pack? Or shold I reserve some from before? If so, how so?

    help with brown ale

I just happen to have the Joy of Home Brewing sitting next to me, and unless it's a misprint, Charlie says it takes a gallon of maple syrup to get a good maple flavor. Ouch.

    Lemon Zest update

I reviewed some of the other threads about zest, and realized that pith may cause the bitterness problem. I have a microplane grater (http://www.cutleryandmore.com/details.asp?SKU=3299) that will zest a lime in about 15 seconds, leaving all the pith behind. I like Tequiza too, but haven't had...

please not another pumpkin ale recipe!

I'm an extract brewer, any I bake a 10-14 pounder, dice it up and add to cold water, add my grains and heat to steeping temp, then remove before boil. I read somewhere baking the pumpkin gives better flavor. I also add fresh ginger and cloves (be careful with the cloves, they can overwhelm) in...

    Lemon Zest update

I added the zest of 6 limes & 2 oranges to a very light ale with 15 minutes left in the boil. I can't rememer if i even washed them. Generally speaking, I never wash my fruit (you know what I mean, you perverts), with no apparent ill effects. I use honey in beer from time to time, and I find it...

    cherries & chocolate

Thanks for all the input. You've given some good ideas, while also creating some new questions (which wasn't unexpected). For some reason, I forgot about malto-dextrine. I think I'll use that in addition to the lactose. Also, there was mention of adding lactose & cocoa to the bottling bucket...
