    Has brewing affected your opinion of commercial beers?

    Sort of. I still like the micro brew stuff, but I enjoy less commercial lagers. I really used to enjoy Yuengling, Sam Adams, and even Blue Moon. Now, although they are still good, I don't dig them as much.

    Take 2 cups of water and your sugar, boil it to dissolve the sugar. Pour this into your botteling bucket. Rack your wort onto the sugar, if you use a siphon tube, or spigot with tubing to transfer, then your wort will mix evenly with the sugar. Then bottle the combined wort and sugar.:fro:

    That's likely the culprit. S-04 range is as high as 75 deg. But active fermentation exceeded that I'm sure. Thanks all for your feedback.

    I did warrior at 60 min and mixed the simcoe and Amarillo dropping a few pellets every couple min. I wound up putting my last few in at flameout

    I used S-04, (what I had), I fermented probably to warm 70 degrees, and yes the hops were fresh pellets (Hop Union)

    I have a similar recipe in my primary now, only it's a 2 gallon batch. I did my sugar with 5 min. left in the boil. It has been active now for 6 days! I really hope it's getting down, because I didn't get as good of eff. as I had hoped. (By active I mean bubbling in my blow off bottle)

    Yeah, it is. That is why I'm a little concerned with the "funk". Maybe that is what it is supposed to be? I don't have a DFH 60 in front of me to compare it. Plus I didn't dry hop (I forgot, doh!):drunk:

    I'm assuming your beer has been bottled. If so just flip them upside down, and then right side up. Then let them sit for a day. If it is yeast it will settle out.

    I just had the same thing in my bottles. I read that it is just yeast floating, due to the surface tension of the beer. Try tipping them back and forth to break the tension and then check them the next morning. Mine all settled out.
