shouldn't your final pH be around there or below that anyway? Are you purposefully creating a basic beer and then adding citric acid to lower the final pH?

in that thread, someone mentions getting tart fruit flavors when oxygenating US-05. They claim that the flavor goes away without oxygenating the first pitch. I would say that this sounds perfect for my S-04 problems, but I just keg conditioned with it, so I don't see how that would help...

I thought that 095 was their version of 1318. If you look at the DNA analysis of 1318 and Conan, they don't seem terribly similar. It would be a pretty big difference, so it's definitely of interest

I kind of don't relate to what you're talking about. I've used a bunch of yeast strains. 1318 has won out on performance, not hype

I think that I'll try 1318 and Conan as a blend for my second beer in the "avoiding S-04 from now on" phase. I know that some people have complained about Conan's ability to finish predictably, so perhaps blending it with a more reliable fermenter will smooth out the bump :confused:

You really need a week or more to mitigate hop burn and let stuff fall out. If you've done everything right, even the most sensitive NEIPA should last weeks in a keg
