    Add compost/mulch. The white is your bines. As they extend above the mulch they will turn green. Once they are up is when you'll decide which ones and how many to keep.

    Man, I love Apfelwein

    Yes, the cool temps are dragging out the ferment. Once it is dry, .099 or lower, and clear you'll have a fine tasting apfelwein. Mine took 5.5 weeks at 68 degrees, so you might be looking at a 2 month ferment.

    The only way that it should still be bubbling is if you have a cool spot for it to sit, low 60's or lower. The lower temps slow it down a lot, but leave it with more flavor when the ferment is done.

    Man, I love Apfelwein

    I sampled my apfelwein after the second fg reading at .998. It taste great and I can't wait till it is carbbed. I'll try to bottle tomorrow. This is after 4.5 weeks at 68 degrees. The only change I made fro EdWort's recipe is I used cane sugar instead of corn sugar.

    more carbon will help to hold more nitrogen. So add chopped leaves, straw, junk mail, news paper, wood chips ect. But coffee is only about 2-5 percent nitrogen. so 100 pounds of grounds would add 2-5 pounds of nitrogen. Look up the nitrogen needs of your typical hops plant and go from there...
