    Well I guess that's another thing I'll have to learn. I guess you disolve some honey in hot water and add it? I don't want it to be super sweet, but at that ABV it also needs to be drinkable. I'm going to spice it in the secondary as well (maybe the second time I rack it).

    Thanks man. Yeah I'm hoping there is some residual sugar because the carboy is going bananas right now. This cyser is probably going to be a 15% beast. I'm just going to leave it alone and hope for the best.

    I brew outside, so it varies. I'd say about a gallon an hour for a vigorous boil in mild temperatures. But when I brewed last weekend on a windy 35 degree day, I boiled off almost 2 gallons in an hour.

    I would slice the strawberries and freeze them. I would say that 3-3.5 pounds of RIPE strawberries would give you the subtle taste you are looking for.

    Just wanted to note that only oxyclean FREE should be used, because the regular has fragrance, which you don't want. I love the oxyclean free and use it to clean all my bottles and PET carboys.
