    I would say you can easily use munich instead of crystal, but not the other way around It will be a total different beer, but you know that. Plenty diastatic power :)

    Use both ;) I've just put those figures in a handy little app called brewking (you can use brewers friend, brew father etc) and actual FG is around 1.010 with an apparent attenuation of 81% which sounds pretty much on target for a cider kit

    Definitely calibrate your pH meter. That should actually be done very often! Ideally everytime you use it. If it isn't the pH meter, then maybe the composition of your water changed?

    Sorry, didn't make that clear. It's my water supply. 1/2 " c-pvc. Painting the walls, so the sink is removed. I figured something like that would work if you find the right pipe. Then a tap/valve after the first 2, so they can stay in position once you find the right mix

    I would be tempted to try another yeast. All ale yeasts will do. I've tried Voss, M47, M31, bry97 and MJ cider yeast as well. I use store bought apple juice. All ferment dry, so you may want to add some apple juice or sugar to your glass if you like your cider on the sweet side

    Your dilution depends on your starting volume as well. I dilute often, but before pitching for 2 reasons 1 I can achieve a bigger volume with my stove top equipment 2 It helps with cooling as I use water from the fridge (previously boiled)

    You should manage I'm also in a hot climate and it is doable. Cooling the wort can be an issue, but there are ways around it. Check for "no chill" cooling ;)

    Sorry, didn't notice the age of the thread ;) I used lemongrass, bruised and boiled for 30 minutes, more or less as I would do when preparing a meal. I could just taste it. I think it was like 3 stalks for 6-7 litre beer. Just wondering what other people do. I might try a "proper" pounding next...
