    SWMBO rejected my IPA

Sorry to hear that, man. What kind of commercial IPAs does she like? I imagine what she's calling "fruity" is all those late hops. If it's any consolation, I love IPAs and my SWMBO generally doesn't like them. I can usually tell how hoppy a beer is just by looking at the expression on...

What the guy atthe store said.....

The fermentation time will really depend on the type of yeast used, fermentation temperatures, etc. It could also be impacted on whether he added any additional sugar or just used straight apple juice (more sugar = more fermentables for the yeast, which might take longer to ferment out)...

Are glass carboys really better than buckets???

I use both and don't really have a strong preference either way. AFAIK, carboys are the only way to go if you have a thermowell that you want to use for fermentation temperature control (at least I haven't seen the equivalent of a thermowell stopper for a plastic bucket). A few folks...

    ? about calculating gravity, etc

Another thought is to brew a batch with a partial boil so you have to top off with water to get to 5 gallons (or whatever your target volume is). I'd even recommend taking a gravity ready before and after you top off (and have stirred in the top off water completely) just to get a feel for how...

    ? about calculating gravity, etc

How much wort did you leave in your kettle? Could it been as much as half a gallon, meaning you really ended up with a 5.5 gallon batch even though you're only fermenting 5 gallons? The wort doesn't know how big a fermenter you're putting it in, so the total volume produced after the boil is...

    Can I save this beer

Well, it may not be the beer you intended to make and may not be true to style, but it doesn't sound like you did anything that would ruin the beer. I'd go ahead and pitch the yeast very soon (since all that wort sitting without yeast around is just asking for contamination) and see what...

    Should i dump the batch

Looks like this has come up before: https://www.homebrewtalk.com/f39/noob-question-about-no-sugar-brewferm-christmas-ale-206375/ Based on some of the comments in that thread, a little more time in bottles might actually help. I also agree with the other comments in that thread that say it's...

Is it supposed to smell like this?

The difference in your actual OG vs. expected OG is pretty much in the noise. As far as the FG differences, I suppose it depends on how you define "a lot". Hitting the target OG and FG would give you 5.12% ABV while your measured OG and FG give you 5.91%. If you're going to err, that seems...

Is it supposed to smell like this?

To clarify, I've certainly heard of beers getting contaminated with various critters, I just don't think I've ever heard of those critters impacting FG. Unless the critter in question was a wild yeast, which I suppose could result in the smell/tastes you describe and impact the FG... Out of...

Is it supposed to smell like this?

What was your OG reading? What was the target OG for the recipe? How far off was your final gravity reading from the target FG? Did the recipe your used (which I'm assuming is where you got the target FG from) call for a different yeast than the one you used? Different yeast strains will...

    Seattle and Bellevue

For bars/bottleshops, the BrewDogs list from their Seattle episode is a reasonable starting place: Top Craft Beer Bars: 5. Beveridge Place Pub 4. Uber Tavern 3. Pine Box 2. Bottleworks 1. Beer Junction To that, I'd add Chuck's Hop Shop and Malt & Vine (maybe not as extensive as the...

HELP! Cider not fermenting after nearly 2 weeks

I'm new to cider making myself, but the first question I'd have is "are you positive that no sorbates or other wild yeast killers were introduced to the juice"? Since it sounds like you crushed the apples yourself, I'd doubt that anything like sorbate was added to kill wild yeasts, but it's...

Cheap & Easy 10 Gallon Rubbermaid MLT Conversion

@rat - I'll take 2 of them off your hands (and I'll even cross the lake to get them from you). I say go for it. :-)

Rubbermaid 10 Gallon Cooler MLT Conversion

I'm just at the beginning of thinking of maybe trying all grain (is that vague enough? :-) ), so apologies in advance if this is a silly question, but is the desire to go to 1/2" just a personal choice or is there some distinct advantage over 3/8"? Either from a volume/flow perspective or...

    NanoBrewery build

Just finished reading the whole thread. Very inspiring! One (minor) thing I noticed is that clicking on the facebook link in your signature took me to a "Not Found" page. I tracked down your FB page throughGgoogle and now officially "like" you :-), but I was nervously reading about 30 pages...

Looking good. With that hood venting all your yummy brew smells outside, I wonder how long it'll be before the neighbors start showing up to "help". :-)
