my last NEIPA i used 7oz/198g my aroma and flavor was great and lasted a long time. I fill my keg with starsan to the top purge it, then push it back to my other keg with Co2 then purge my lines and transfer. the only thing i can say is add more hops, can never go wrong with more hops ;)

Im sorry, I might be missing something here, if you have a pre-boil of 1.054 and you're OG is 1.075/1.080 how much are you boiling off? On my system i would probably end up with an OG of 1.060, my boil off rate is between 3/4 - 1 gallon roughly.

I like the idea of peaches and some smoked malt.
