A little warning from a couple brews ago

Yikes, glad you're okay. I never thought of doing that with LME, and now I never will!

    Brewers Best Kolsch

How did it fit in the box? Those kits are usually pretty snug. Nice bonus, anyway.

will my beer carbonate at 35-45 degrees F (1-10 C)?

3 weeks should be good, and then putting them back to 35 will be perfect, they will settle and clear out.

Trying to keep it simple but, perfection dominates

While airlock bubbling isn't the best indication of active fermentation, I wouldn't bottle a beer that was still bubbling without taking a couple hydro readings. It could very well be done and bubbling for some other reason, but I'd want to know for sure to avoid bottle bombs. Info for the...

Anyone try the BB "Hop Nog" yet?

Finally had some over the holiday. Solid beer, a nice bitterness and the experimental hops have a good citrusy flavor. Great nose, too, glad I dry hopped.

    Possible over Carbonation in bottles?

It could be a case of overpriming. We need some information to try to help - what did you carb with? How much? How big was the batch? In any event, the brewer at the shop was wrong, the yeast will only eat the priming sugar you put in. So leaving them for 3 weeks at room temp is only a...

    Brew King beer bag-how to?

Very weird. Definitely brew it, I'd be interested to see how it comes out.

    Hydrometer- just chuck it in?

You can put it in the fermenter, although you may have to wait until bubbles subside on top if it's after you've aerated. As for your sample OG (assuming this is an extract brew), it's very possible the wort hadn't properly mixed, especially if you used top up water. It'll be fine, assuming...

    Bought a kit

Good idea getting the good stuff up front, how could he not like it?:mug:

Anyone try the BB "Hop Nog" yet?

I'm bottling mine tonight after a month in primary and 10 days of dry hopping. There's another thread on here somewhere with lots of people who have brewed it, people seem to dig it. I used .5 oz of the experimental at 15 and another at 5, then dry hopped with the last oz. Smells/taste great...

    what's brewing this weekend?

The BB oatmeal stout is a good one, but you have to be patient with it. Mine was really thin until it was in the bottle for a good while, but a longer primary would have helped too. The hopnog hops will be fine in the freezer, mine were frozen for a month before I brewed with them, and the...

    Brewer's Best robust porter question?

No need to pitch more yeast, there's plenty in there. In fact, let it sit in secondary a few weeks. Next time, let it sit in primary for longer than a week, it'll give the yeast plenty of time to make good beer. Kit instructions generally push you too quick. Since I've started leaving my beer...

NOOBY - don' think I did a good job.

It's probably been long enough that a couple readings should do it, you could have a day in between if you're really paranoid. But you should be fine, don't worry. Drink the test beer! :rockin:

    enough yeast?

It depends on on the OG and batch size. Use the mrmalty calc: Mrmalty.com What do you mean about yeast at bottling? You won't need to repitch anything at bottling, there will be yeast in suspension. How much bourbon are you planning on using? I just put 8 oz of Buffalo Trace into a...

    Pumpkin Spiced Ale

I'm using the right size tab for sure, and the alcohol content is about 5.5%. You may just be right about it never carbing, but I'm going to foolishly keep trying. It does taste very good, but it's a little too sweet without the bubbles. It's not like I dump em the bottle after I test, after...

    Pumpkin Spiced Ale

Guess I'm not the only person with a carbing problem. Mine's been in the bottle for almost 2 months now, and it's just not carbing. I didn't put enough sugar in when I bottled, but I also tried Cooper's tabs and it hasn't really helped. I wonder if there's a reason why this would be so...

Carb dropped an undercarbed beer. Let's see how this goes!

I brewed a very tasty pumpkin ale at the end of summer. As I dumped all the pumpkin and squash into the boil and left it in primary, I had a ton of trub and only got about 3.5 gallons out of it. When bottling, I scaled down the priming sugar, but I realized after I scaled it down too much...

Same type of hop, different Alpha Acid percentages.

That's correct. Beersmith (and maybe similar programs, but I've never used them) has a default AA for hop varieties, but you can adjust it. That way, you can ensure you hit your target IBUs.

    IPA and Oak Chips

Dang, too bad. I've had a couple oaked IPAs and they are delicious. Cigar City Brewing in Tampa does one called Jai Alai and it is amazing.

    my first shot

Whoa, only a gallon?? Yeah, go brew up 5 gallons. If you're going to do all the work, might as well get a couple cases out of it.
