    Butter at the bottom

So I made a munich helles and used Cali lager yeast. Week and a half at 60 degrees. Diacetyl rest at 70 for a couple days. Now it's been kegged at 40 for almost two weeks. The problem is the first glass is pure butter and real hazy. It tastes like popcorn. Every glass after is much better but...

    Wyeast california lager

I did a five gallon batch of German helles and used the california lager yeast. My question is. Is this a slow starter like a regular lager yeast. It's been 3 days at 58-62 and it has just barely started to krausen. Also after I pitched at about 65 I brought the temp down way to far. Say 48-50...

    Too much Carafa 3. oops

Just the regular Dustbow. A chocolate Hefe might not be too bad. Could work well with the sweetness of the yeast. It only calls for .75 oz at 60. I wonder if now it might handle more to try and balance it out. I have another .75 available?

I need to control temp at 68-72 for my ales but also want to use it to lager. I know some guys who use heater blankets...

    Space heater fermenting

So I had an idea to use a small space heater in a chest freezer for fermenting. The heater has a built in ambient temperature sensor so I figure it will work great but have never seen it done. I saw a setup this weekend that was a wood enclosure that used an ac unit and a space heater and he...
