    How long can a yeast cake stay alive...

    I wash my yeast, but I've let the cake sit a couple of days before with no problems. No idea how long it would be viable, but I would guess you'd be fine within a week. I leave an inch or so of beer on top of the cake and just seal it back up.

    Do you ever just make up a recipe and say "Suuure why not?" YES! Most recent was a Black Cherry Sour Porter. 25% sour mash. Combined with pure black cherry juice in secondary. Turned out.......very interesting. No where near "bad" but not great either. Letting it age to lose a bit of the nose...

    I've had this same translucent layer thing happen to beers before. The first time, I was worried but the beer turned out completely fine. Now I just ignore it if it happens. (not sure exactly what it is.... I'm more of a "if it aint broke, don't fix it" type of brewer)

    Ohh, just saw that you're trying to get rid of the perle. I would just use them, bumped up to get it where columbus would alpha/ibu wise. It shouldn't make a huge difference in a beer this dark if you are only using hops for bittering.

    I would go with columbus over perle personally. I'd probably drop the Williamette as well. I usually only do one addition of bittering hops in my RIS at 60min. Come to think of it, the last one I made used columbus. I might also throw in a slightly lighter crystal malt (60-80L). Using a combo...

    Sounds like bad crush or bad sparge. I have read about sparge water filtering down the sides of the mash and leaving behind most of the sugars. I think that is probably what happened, possibly due to a sticky mash caused by the wheat. Did you vorlauf the mash before you started sparging?

    Do you plan on aging the beer? If so you might want to bump up whatever your target bitterness level is because some will be lost during that process in my experience.

    Skip extract and just start out with all-grain. Also, you will not get as much out of festivals if you are already tipsy before lunch.

    I'd knock the 120 down to a half pound. That should give you a nice deep copper red color bordering on light brown. Agree with above hop adjustments.
