    I do it regularly. As long as your mash temp doesn't get below 140. You will be fine. If lower than that it will slowly start to sour.

    Confused. You seem to be asking about overnight mashing but also mention lactic acid and souring. Are you talking about a sour mash? They are two completely different things.

    You will find that the needle will stay where it was when filled for a long time then suddenly start falling after 6 kegs or so. Use it all up until you're at zero then fill.

    I test with strips because I usually keep it for 2 months or more. During that time the ph slowly creeps back up. By testing I know when to spike the mix with more Starsan or toss it.

    I agree. Not huge at all. BJCP guidelines put FES's at 1.056-1.075, so you're right on target.

    That's a lacto infection. Do you mill your grains in the same room you brew in? On the bright side, you might have a decent sour beer.

    Not a dump question. If you use a taller MLT like many, your BH efficiency might be slightly better due to less area for your wort to pool on the bottom.     Festabrew kits

    Yup. Used to do them a couple years ago before stepping into allgrain. They weren't bad. The west coast IPA and oatmeal stout were my favorite.
