    Maybe use Saaz for bittering and move the goldings into the flavor section. It has a fruity grassy flavor and that may match up better. I did e-mail Dan and Martha so maybe they will have an opportunity to share a few notes.

    Go for it. Do you have the mash tun for all that grain? I did a Founder's Breakfast clone for my first AG and it has been my best beer so far. In fact... it keeps getting better as we type. Just need a good mash ton to maintain those temps. :ban:

    2010 Sierra Nevada ESTATE

    I enjoyed last years a bit more. This years seems to have less of a flavor addition and more bittering. It was definately crisp and reminded me a little bit of the Goose Island IPA in terms of the flavors. Can't wait for the Celebration Ale... should be any day now. What hops are you growing?

    I wold suggest using some Gypsum Salt in you mash or adding some to the beginning of the boil. I've been really impressed by how much more it brings out the flavor and bitterness of the hops. I use Safale US-05 and have good results. It's very clean.
