    New Lalbrew Farmhouse yeast

When a storm broke down an old orchard, about 100 years old. I collected apple, pear, cherry and cherry wood. I cut 2cm2 cubes, and dried for 2 years. Then I roasted them to different levels. It's an experiment. I collect healthy and nice leaves and add them to the beer;). grape leaves are ideal...

Brainstorming - "Quick" Brettanomyces Beers (no sour)

For example, phenols that fritters transform into other compounds. The amount of sugar in the beer is of negligible importance for the funky aromas.

I disagree, the berettt give a unique beer profile. Yes u need a lot of time but results? Amazing. It's just that isolated strains are often boring.in saison you have much more substances for bretts than in 100% brett beer

    Adding blueberries to the boil?

Always adds whole fruit. Only frozen, it allows them to release the juice freely, and it is easy to separate them from the beer. Additionally, the whole fruit has a lot more flavor.

    Slow start

Liquid yeast=1-2L starter. This is rly important and give u best results. Additionally, the use-by date is extremely important for the quality of the beer.

100% brett is amazing for IPA. 2 month and u have perfect IPA. They will give a lot of fruit, freshness but little funky. I like this but u need mixed fermentation ;) Use strongly phenolic yeast, then the bretts have the opportunity to show off. First job must make belgian yest, next beer go to...

Thank you, I grew up in the countryside and I use its gifts. My grandmother taught me a lot about herbs, plants, frutis. Currants are great, expressive and tasty. You can try currant leaves, they are interested in the aroma. I have plans to: Saison+wood+European blueberry(This is fine name...

    New Lalbrew Farmhouse yeast

At first I apologize for my poor English. I use this yeast in my wild fruti saison project. I sent a beer to a contest once and won. In my opinion, wrongly. Fermentation at 20-23C produces lots of bananas and little spices. You can go wrong and say "ohh this is hefe-waizen!". Beer is not dry...
