    Belgian ideas for a dude who doens't really dig Belgians

    How about. a tripel? They are pretty basic and derive most of their flavor from the yeast. If you use a yeast that is milder flavored then you might find that fits what you are looking for. Try WY 3522. Not as strong of the Belgian flavor as some of the others.

    Framhouse brewing Supply is another good source. They sell hops by the pound and also in 4 oz packages. Which is nice for some hops that you do not need a whole pound.

    American Amber Ale Red Rye Ale

    I brewed this a few times, but forgot about it for a long time. Just brewed another batch recently and remembered just how good it is. I did use Denny's Favorite (WY1450) because that yeast and rye are made for each other. Great recipe. I won't wait so long next time. Good stuff. Great recipe .

    Foaming problems

    you mention rinsing after you starsan your equipment. Starsan should not be rinsed, it is a wet contact sanitizer. By rinsing you are just negating the sanitizing you just did with the starsan. Next batch, try not rinsing your bucket and equipment and that way the sarsan will be effective.

    The difference is that the BU:GU ratio will be changed. So yes the beer will not be the same. You would need more hops to get the same ratio.
