    No need to rack t a secondary. It will be fine, even for a few more weeks. I like to bottle my saisons. I use sugar to carb. I have never used DME to card anything so I can't speak about that.

    I have the same set up. The MM2 Pro and the All American Ale Works motor. It is an awesome set up. I swear this thing would grind rock if you fill the hamper ith gravel. Nice crush. Just fill the hopper and flip the switch.

    I disagree with this. I think it is exactly the opposite. Saison yeasts are the only yeast that does not produce fusels at high temps. I brew saisons often ( I have brewed about 75 saisons) and let them get very warm. Some even do best at very high temps. 3724 works best into the 80's or even up...

    Just down cycle your plastic equipment. By that I mean, just use your current equipment ( hoses, bottling bucket, bottling wand, etc. ) for the sour beer and then buy new for your clean beers.

    Saison yeasts are the only yeasts that are fine with high temps like that. Depends on which yeast you used, since some of them do best heated up that high. Most yeast produce fusels when they are fermented too hot, but most saison yeasts do not.

    Biere de Garde is a much maltier beer than a saison, so a saison yeast is wrong for the style. Use a more neutral yeast and you will be closer to style. I brew one every year and use WY1007 and it works perfectly.

    Brett may add a very soight tartness. Just give your brew rime for the brett to work and I think you will like it. I add brett to about 3/4 of the saiosns I brew. It is a good match.
