Top Ale Yeasts?? What Are They??

I love Safale S-04. It's great not having to make a starter and be able to brew anytime you want. It's also cheaper than a liquid yeast which is nice. I think it makes a great beer, it ferments fast, and I can keg a crystal clear beer within a week of brewing. I mostly brew English style...

    What to do with $100?

A grain mill is great because you can buy grain in bulk which saves money down the line...but kegging is the best investment.

    Question on Crystal Malt

The color may work out the same, but the flavor wont be the same. Depending on what you are brewing I'd say go for it.

Who brews all they drink? Who still buys beer?

Since the Summer of 2008 I've probably only bought a case of beer to supplement my homebrew for at home drinking. I have a constant supply of homebrew on tap, and it is not too tough to maintain. Before I got my kegging set up and before I found my rhythm on brew day I brewed a lot less...

    Pellets, Plugs or Whole Leaf?

What is best for dry hopping - pellets, plugs or whole leaf hops?

Checking in from Long Island, New York

Impulseballer check out Kedco in Farmingdale or Karps Hardware and Homebrew in Northport. Both are very good homebrew shops. Kedco is a bit more expensive but sometimes has more in stock. I know Kedco will order anything for you that they don't normally keep in stock and I'm sure Karps will...

Ratio: Good brews vs Bad brews

I brew about 15 batches / yr and most of mine turn out great and I get plenty of compliments on my beers. Occasionally I make a beer that I think is just OK but I still get compliments on it so I don't know if that falls into the good beer or ok beer catagory. I do have a keg at the moment...

    Sailor's Funeral for my Oktoberfest?

I did make a starter but it still took a while before I saw activity in the airlock. Final gravity was 1.017.

    Sailor's Funeral for my Oktoberfest?

I brewed an Oktoberfest a few weeks ago, and I'm not sure if I should dump it or let it age. I used Wyeast 2112 with the following recipe 6# 2-Row, 4# Munich, 0.5# 60L, 0.5# Wheat, 6.3 AAU Liberty for 60 min, 0.75 oz Saaz for 15 min. It was a bit of a sluggish start and fermentation, and took...

    Stuck Sparges 101?

I brewed a hefe last week and had a stuck sparge even with rice hulls in it. I added about a quarter pound of hulls to the stuck mash, stirred it up, and it flowed like a champ.

    Boil kettle covered/uncovered?

As I said above I havn't had any problems but maybe I should try without the lid next time.
  12. T

what is this? yeast or infection?

It looks fine. You can get a lot of funk pushed up by the foam during fermentation. Don't go jamming anything in the carboy.

    Boil kettle covered/uncovered?

I keep it covered until the boil starts, then partially cover during the boil. I havn't found any ill effects from that practice.

    Whacky strike Temp Calculations

I calculate 174, and I'm usually dead on. I made the most absurdly complicated brew spreadsheet a few years ago and have no idea how I arrived at this calculation, but here it is: 0.2/(infusion qt/lb) * (target temp - grain temp) + target temp. 0.2/1.25 * (160 - 70) + 160 = 174.4 My...

    Lots of sedimentation!

That is a lot of sediment. Did you add gelatin to the secondary? You need to let the beer clear before racking, and be careful not to disturb the sediment while racking.

    Yet Another 50% Efficiency Day

Definitely seems like a crush problem. I had the same thing happen to me. I bought grain at my LHBS had it crushed and got terrible efficiency. Finally I ordered crushed grain online and achieved my target efficiency. I then got a mill and have never had a problem since.

    50A GFCI after a 30A breaker?

If you have a 50A subpanel fed by a 30A breaker the 30A will trip first. Typically the subpanel is rated the same or less than the main feeding breaker. DO NOT replace your 30A breaker with a 50A breaker unless you are 100% positive that all wire on that circuit is #6 with a #10 ground. Also...

WLP300 24 hrs later and no activity

I pitched a fresh vial of WLP300 in my Hefe last night and there is no activity in the fermenter 24 hours later. I thought this yeast starts quickly. SHould I pitch a pack of WB-06?
