I had this exact same problem just recently. Used kolsch yeast to brew an Oktoberfest beer. So I'd like to see the help you get.

Yeah, I finished a starter to grow the dregs into a larger size (first starter I've ever made that I'm excited to try!) This weekend I'll be pitching the starter into a 5 gallon batch! Hopefully, this time next year, I'll have sent someone an Atrial Rubicite clone of mine in their box!
