    I'm the furthest thing from a pessimist, but I doubt an ice chest can withstand that much pressure. And if you managed to seal it that well, I bet the walls would bend (thus increasing the volume) thus lowering the pressure acting on the fluid. You are much better off buying/harvesting bottles...

    About to PM you. Don't drink the bottle until you are ready to use them. Or you could make a starter and toss them into that with an airlock. Freezing the fruits causes the cell walls to burst which means that the yeast and bacteria will have a much easier time breaking down the fruit for food.
