    You can't drive that SSVR directly from arduino. To do this you need to add lots of circuitry. SSVR is analog phase- angle controller. If you have an arduino you can do a digital phase angle controller one of example http://playground.arduino.cc/Main/ACPhaseControl

    You need a jumper wire between PID terminals 4 and 1 to make buzzer works. You can also simplify your controller a bit if you connect wire going from buzzer to fuse to PID terminal 2 instead. Buzzer circuit will be proteted by PID fuses and you can get rid of separate fuse for buzzer...

    PT100 is pretty much standard type of temperature sensors for brewing application. And PT100 is not thermocouple.

    Regular DPDT switch is able to control thermosensor selection. If you add a DPDT relay with 120V coil connected in parallel with one of contactor coil it will automaticaly select proper thermoprobe .

    Diagram is OK. You can tie to SSR signals together since PID has galvanically insulated power supply. However DPDT switch as schematix suggested will be safer option.

    You can easily use only one SSVR with PID if last one has a relay output.

    Do you have an Ohm-meter or multimeter? If so you can measure an element resistance. For 240V 2000Watt it should be around 29 Ohm, for 120V 2000 Watt element it's around 7 Ohm.

    That "controller" is just a regular 16Amp SSR with embedded heatsink. It can't be controlled by potentiometer. But you can connect it to a PID.
