Watch the temps. It will ramp up on its own, probably into the upper 60s. I'd pay more attention to temp and krausen but I don't like checking gravity. Seems like a needless risk of infection unless you have a sanitary way to grab a sample
How cold? The fermentation is going to produce a lot of heat (exothermic) so unless it's in the 50s I'd be comfortable letting it ride until it slowed down, then add heat to keep it up and slowly drive it up. What's your planned upper limit?
I just talked to the president of our homebrew club and he said they just tapped a beer they made with a culture they've been building up for a couple of years from a Crooked Stave Nightmare on Brett brew. He's also a microbiologist, so he's a great resource. And he said I can have some of that...

So no bacteria other than than lacto from the probiotics? How would you describe the flavors you get from the base beer? I imagine you can get some good tartness and acidity and then the brett adds complexity. One of Mary's (and my) favorites from Crooked Stave this go round was Member Berries...
