    You will want to use some biscuit malt for the "bread" flavor. To get bananna use a heffeweizen yeast and ferment it warm to bring out the nanna esters. :ban: You will get more :ban: flavor from the yeast than using the fruit

    I use an ITC-1000 temp controller. For a heat source I use a waterbed heater rolled up in the bottom of the fridge under the shelf the bucket sits on.

    I ferment in and cold crash in a counter top height fridge (large mini fridge without freezer) 4.5 or so CF. The 7.9 gallon wine buckets I ferment in fit perfect with airlock on the bottom shelf with no mods other than a chunk of wood to support the bottom shelf :)

    Fermentation bucket with lingering beer smell

    A hardcore soak in oxyclean will help get rid of some of the smell too. One scoop per gallon. Fill it with hot water and let sit for a day or two.

    Maredsous produces some very nice brews. I am fond of their blond, brown, and triple. You can get them here in the states but are very hard to find.

    I recommend getting another keg if you have one that is rubber dipped or even better just buy a 15.5 gallon pot. The pot will have better heat transfer and be more energy efficient. Not to mention lighter.
