    my chief complaint

i use bottles and a Red Baron Bottle Capper. I dont think the styles that i normally drink are excessively carbonated. I like IPA's, pale ales, brown ales, ESB's and the occasional lager. Ive brewed a pale ale, IPA, bohemian lager and now the porter is ready for bottles. i hope to knock this one...

    my chief complaint

i normally allow them to bottle condition for ~2 weeks, then there are ones that will sit for a month or so before i get to refrigerate/drinking (i have really noticed a difference in flavor maturity so i try my very best not to drink them right away) but i think im leaning toward at least...

    my chief complaint

So everyone that tries my beers has the same general comment. "tastes great but its a little flat". i have been using The Beer Recipator - Carbonation i am about to bottle a porter today and wanted to double check the number i get from running that calc. It says to add 5oz of corn...

as embarrassing as it is, i guess i was just wishing? for an infection. i showed this brew off to a bunch of people. and in my drunkenness, i assumed it got infected. then i saw this before racking. figured id post. im way to cautious with sanitation so it figures. ill post pics of my new brand...

Another Infection thread. pics not great either

So i know the picture isnt great, but for future knowledge, do the whitish floating spots on the top that appeared to swirl together look like an infection? smells great, looks good (minus white spots), just looking for knowledgeable thoughts. Thanks!

    How much would it cost.....

....to fulfill a dream many of us have: Open up a small brewpub of your own. So i was thinking last night, that if things dont unfold as i plan, i might be interested in taking our some loans and going into business with a friend of mine that already owns a great burger/bar place. So how much...

    immersion chiller build question

so i went out and bought all the copper tubing and picked up a set of M/F 5/8'' garden hose barbs. Then when i get home i notice that the 3/4'' inner diameter of the hose barbs doesnt fit snugly around the 1/2'' OD copper tubing. So my question is: Where can i find a hose barb that will fit...

Brewing the Dogfish Head 90 Minute IPA clone today

The 90min IPA is above and beyond my favorite beer (big fan of the 60 also). So i figured id attempt a dogfish head style IPA as soon as my ingredients arrive. Heres what i ordered not sure on exact brew day procedure yet. So let me know what you guys think or if you have any recommendations...

Whats the deal with "dog" and brewing names?

dogfish, as in dogfish head beers is actually a species of shark (hence the shark on the label). so that beer in particular has nothing to do with dogs besides the coincidental name

    Cleaning advise

So I had a party and cooked up some crawfish in my brew pot. First time doing that and after i cleaned the pot it still smells like seafood. What should I do to more properly clean the pot?? Will I get off flavors in my beer if I cant get the smell out? Thanks!

    Have Bottled, But ...

i find myself in the same situation after almost every batch... but what i have come to find is that waiting is worth it. I have been pretty upset after prematurely cracking one open and it not tasting how i wanted. Its worth the wait. The initial rest at 60-70 degrees is to allow carbonation...

My first Lager - Question about 'lagering'

So i dont have any fancy temp control equipment (but i think im going to convert an old fridge after reading so much about its importance) and i figured i could only do a lager in the winter. I made my best attempt at making a bohemian lager given my equipment: US Pilsen Malt 5.00 lb 62.5 %...

    Adding Oak Chips....

I added oak chips to the beer I just bottled. I dont consider myself experienced at all, but I just sprayed them with a little sanitizer and added them after i transfered to the secondary. Let it sit for 3 weeks in the secondary and then bottled. All the chips were resting at the bottom of my...

Making my way to grain brewing...

So ive only been brewing for two months and i want to get away from extracts. From what ive read i dont know if i am ready yet. i intended to brew a bohemian pilsner type beer today hopefully not having to use the back up DME i bought. (From the looks of it i will need to) So after my...

    Priming question

so i bought corn syrup instead of corn sugar. i hope this is not a big problem, but wanted to check to see what type of adjustments might be necessary. I plan on priming a 5gal batch today and want to check out what type of solution i should make with my corn syrup. (light corn syrup 30g total...
